Caramelized Onion Hummus

I have only one good memory of my unfortunate time living in Erie, PA. This is going to sound really sad, and it really is but there is a grocery store called Wegmans. It's an east coast chain, and their on I would say the upscale end. Anything super expensive and fancy can be found at Wegmans. They have a hot and salad bar that rivals Whole Foods in choices and price. They also have an olive bar with all kinds of olives, marinated veggies, grape leaves and the best hummus I've ever had, caramelized onion hummus. I used to get some almost every time I went there! It was rich and creamy and the onions made it a little sweet. Great stuff. So yes, hummus is my one good memory of Erie, PA.
I decided to try and remake that hummus since I'll probably never see a Wegmans again. I also figured I'd share the recipe since it's super easy, although you do have to spend time caramelizing the onions. It would be great to bring to a holiday party! Who doesn't love hummus, and since most hummus is just naturally vegan it doesn't have to be a big deal!






                                                         Caramelized Onion Hummus

  • 1 Can or Two cups cooked chickpeas
  • 1 1/2 T. Tahini
  • 1/4 Tsp. Salt 
  • 1/4 Tsp. Pepper
  • Juice of Half of a Lemon
  • 1Tsp. Coconut Oil
  • 1 Large White Onion Sliced
  • 1/4 Tsp. Salt
Add the coconut oil to a medium sized saute pan and add the onions plus 1/4 tsp. salt. Start on a medium high heat for about three minutes, then turn the heat to low and let the onions cook, stirring about every ten or fifteen minutes. It took me about forty five minutes. Your kitchen will smell incredible!
After the onions are done caramelizing, let them cool for a few minutes and then add them along with the chickpeas, tahini, lemon juice and remaining salt and pepper to a food processor and blitz until smooth. I added about three tablespoons of water to help things move and groove.
It has a rich, deep savory flavor with a hint of sweetness. It has been a few years since I've had the original but from what I can remember this is pretty spot on!
Now I wanted to talk about the crackers. I like Mary's Gone Crackers, but I don't have them often because of the price. I saw these new to me Mary's crackers which seem like they're trying to go for a wheat thin vibe. I decided to get them to go with this hummus. They're even pricier than the original crackers, so this was a real splurge.
In terms of texture they're okay. They're definitely thicker than a wheat thin, and also a little crumblier which I've learned is the norm for gluten free.
These are okay with hummus, but any dip that is thicker, like a cashew cheese ball or something like that would be too much for these guys to handle.
The taste is what bothers me. I can strongly taste the baking soda which is an issue I've had with other gluten free baked goods, especially sweets. I know they use it for leavening, an I guess gluten free needs more or something. It's really, really off putting and I'm super disappointed. If you're gluten free I would avoid these at all costs. Stick with her original crackers or if you're like me and on a budget look for the thin rice crackers. They hold up to dips well and they are usually the cheapest of all the options.

  1. Thank you for giving a realistic time on the caramelized onions! I got a great cookbook recently (the Vegan 8), but one of the grain bowl recipes calls for caramelized onions and she claims it takes 8 - 10 minutes! Those are barely sauteed onions, never mind caramelized. But damn, I love them and that recipe sounds amazing!

    I think you should call it, "Game of [Fluff] Thrones."

    1. I don't know how they could be caramelized in eight or ten minutes!! They are so worth the wait.

    I think I would describe Wegman's as budget gourmet. There are really expensive options out there, but some of their food is cheaper than Aldi's. I bounce between the two places for groceries. I never got the hummus from the salad bars, I don't even glance at them in fear of being charged money lol But maybe I will take a teeny tiny scoop of that hummus next time I go.

      You're right about Wegman's. They would sometimes surprise me with great prices. But I always knew to check Wegmans for any specialty vegan item I couldn't find anywhere else!

  3. OMG WEGMANS!!!!! That was my grocery store while I was in college and it is the best freaking grocery store ever. I miss it so much! I don't remember seeing this hummus there but it sounds like the most amazing flavor. I definitely need to try this.

  4. YUM! I recently had some Sabra caramelized onion hummus at a party. I'd never seen that flavor sold in the grocery store, but this person got it a Costco. IT WAS SO GOOD. Will have to try your version! Wegmans sounds like The Fresh Market, the high-end grocery here.

  5. Thrive Market's Simple Mills brand and Julian Bakery's Paleo Thin Crackers were pretty tasty for gluten-free vegan crackers. Like mostly all gluten-free foods, priced a little higher than the glutenous kind. It's classic price discrimination against the gluten-sensitive = not fair!

    1. I have heard good things about the Simple Mills brand. I could agree with you more about price discrimination. It's so maddening I feel like I could rant forever about it!

  6. I use Wegmans as my alternative to Whole Foods (I usually avoid Whole Foods), because the prices on some things are jacked way up, especially the produce, at my local store. So I get very specific things there. But they are my go-to place for things like Beyond Meat stuff (at least the Beyond Chicken and Beyond Burgers), vegan deli slices, Bee Free Honee, Beyond Bouillon No Chicken soup base, and things like that. I have never tried the caramelized onion hummus, though! That sounds great.

    My Wegmans is not really expensive for basic groceries, though, so I'm fine with picking other stuff up when I'm on my periodic stock up on the vegan specialty goods.

    I'm glad you got one good memory out of Erie, at least.

    1. Wegmans is definitely the place to go for any vegan specialty item. I really loved them for that! I remember they also had lots of exotic produce, more than any other store I can remember.
      Wegmans and hummus, I guess I have two good memories of Erie!

  8. I’ve never been to Wegmans’s - none near me- but have hear it’s an awesome store. Carmelized onion hummus sounds amazing!!
    There’s actually a great method for making lots of carmelized onions in the oven- i did this a few times for french onion soup :)) still takes a long time but just need to stir every ten min or so instead of standing and watching and stirring.

    You should make yourself flax crackers!! They’re stupid easy and GF, not too sturdy but would work for hummus. Literally just flax meal (hello bulk bins) and whatever spices you like- nooch is great in them- and water. That’s it! Like these:
