What I Ate Wednesday


This was my breakfast which I enjoyed in bed. This very green smoothie had spinach, maca powder, frozen pineapple and strawberries.
Later on while I was cleaning I whipped up this delicious green juice which has orange, spinach, ginger and carrot.Very zippy and sweet. It really tasted like ginger and orange, you only know it has greens is from the color.

For dinner last night I made lemon-y potatoes with some twists. I sliced some red potatoes in half and coated them with a mixture of lemon juice, some Italian salad dressing, a tiny bit of sweet hot mustard, garlic and salt and pepper. I covered them in foil and let them slow roast in the oven for about an hour. I tossed some fresh parsley into the potatoes after they were out of the oven. The potatoes were bursting with flavor and had a firm but soft texture that I love.
Two of the reasons my bed is never fully made. Roxy and Joan both really enjoy laying in the folds and creases.

  1. Sweet Joan and Roxy! The floof gets me every time! Your meals look so healthy and delicious. I wish it wasn't such a pain to clean the juicer, I feel like I would make juice a lot more. The lemony potatoes sound so good!

    1. I remember I use to have a juicer and I hated using it!! I just use a blender and strainer, so much easier!!
      The potatoes were so so good.
