Food to Fuel and Last

This was my breakfast/lunch yesterday. Leftover kitchari with green dragon sauce and steak cut fries with A-1. I try to force myself to eat a little more than I normally would since I don't get a meal break at work. Sometimes it works and sometimes it doesn't.

You can always tell my late night meal pictures by the horrible kitchen lighting! I sliced some tofu and let it marinate in soyaki sauce and crushed red pepper while I was at work and threw it in the oven when I got home. While that was cooking I made some Jasmine rice and Asian slaw I had in the fridge. I doused it with sriracha and called it dinner. You can see a tiny bit of Roxy. She was helping me make dinner! Marinating tofu or tempeh while I'm at work is a really easy meal when you don't feel like doing a lot of active cooking. You can marinate it in the same dish you bake it in, so it's an easy clean up too.

Yesterday I moved my blogging table from the kitties room to the living room. I put it by my window. I thought it's a better place to take food pictures than the empty Chewy box I've been using. As you can see, Etta decided it was an amazing place to take a rest. Cats are so funny. Everyone was very upset that I moved furniture without consulting them!

  2. Haha, my cats have to lay on ANYTHING new (or even old things in a new location). I like to think it's how they stake their claim!

  3. That soyaki is my favorite stuff ever!! It's awesome for marinated tofu or tempeh. And i actually just discovered that when whisked with some peanut butter and a little splash of rice wine vinegar it makes the most amazing easy delicious sauce.
    I hope you bring a sturdy snack with you to work to keep your energy levels up, being on your feet so much is exhausting!

    1. I'm going to try the soyaki peanut sauce for sure, I love peanut sauce!
      I'm going shopping today and hope to get some good stuff to take to work. About halfway through my shift I start running out of energy.

  5. That bowl of stuff looks sooooo good. Tell me more about the Asian slaw. Is that something you buy prepared or did you make it? What's in it?

    1. It was one of those salad mixes where you just mix the dressing with the greens. This mix has cabbage, kale, red cabbage and carrots. The dressing is a sesame ginger dressing and it's SOOOOOOO GOOD!! It's one of my favorite salads ever. It also comes with little won ton strips and thinly sliced almonds to add in. Delicious.

    2. No I actually got it at my job. I think it is from Dole. Also Fresh express or one of the other salad companies makes a version too. It's called either Asian Slaw or Chopped Asian Salad. The next time I get it I'll take a picture. Or I'll take a picture tomorrow when I'm at work. It's with all the bagged salads. It's sooooo good!
