Keeping It Simple and Cheap!

About a year or so ago, I saw a recipe for lasagna soup. It looked so good, and seemed like such an easier way to get those flavors. Since I had a couple of random lasagna sheets left over from my failed attempt at a holiday lasagna, I decided to try the soup version! I just basically made a tomato-y lentil soup, and added the broken lasagna sheets. I topped my bowl with nooch and some baked tofu I coated in garlic, Italian seasoning and nooch. This was delicious, and somehow was a little fancier than regular old lentil soup!
Yesterday was one of those days where I really wanted to pull my hair out. Needless to say I did not feel like cooking. So I just made some rice and a quick peanut sauce. This tasted really, really good. For some reason when I'm feeling a little off I find plain rice to be very comforting. And peanut sauce always comforts me!! This is actually a great budget meal because rice is cheap and you can find it anywhere, same as peanut butter. I got the Kroger brand peanut butter on sale for only one dollar!

Sorry for the horrible, no flash picture. But here is little buddy slinking around my living room! We are making progress, he gets scared less easily now, but he's still not sure. So I'm just letting him explore, and trying to let him know that he is invited and wanted and loved. He knows that there are cats who live here, and I think he's scared of that maybe. I'm not sure, but I'll keep trying!

  1. OMG - little buddy is the cutest thing ever!!!! In my experience, females are much more territorial than males so when you introduce him, proceed with caution.

    I notice the flip flops have been officially retired from their cameo appearances for the season, only to be replaced by the boots.

    1. You are so right about females. I've taken in a lot of strays over the years, and Dylan was always totally okay with it. But when my girls come out of the room after he's been in and gone back outside, they are like on the prowl and they have a very aggressive energy.
      Ha ha, the flip flops are actually still floating around too!! But they decided to let the boots have some spotlight!

  2. Awww he's too cute! I'm so glad that he's starting to adjust. I know there is still progress to be made but it's a great start and he is too cute!

    The soup sounds delicious and I know EXACTLY what you mean about the rice because I had rice for dinner last night because I couldn't be bothered, ha!

    1. Ha, I'm glad I'm not alone on the rice! Back in the day when I first went vegan on nights where I couldn't be bothered to cook, I would have white rice with some vegan butter and a little salt and pepper. It was very comforting!

  5. Lasagna soup sounds really amazing to me...!! There is absolutely something comforting about a simple bowl of white rice. A bit of soy sauce and earth balance on top and I’m happy! Although with pb sauce sounds even better....

    1. White rice with earth balance used to seriously be a huge comfort food for me!! I never tried soy sauce with it, just a little salt and pepper!

    Rice and peanut sauce sounds like such a great, comforting meal. I never think of just putting sauce on rice, but it seems perfect especially if I don't want to make anything too fussy.
