More Food and Cats!

Last week I was reading an article about the health and longevity. Sweet potatoes, particularly purple sweet potatoes are a big part of health and longevity. Unfortunately for me I am not a fan of the texture of sweet potatoes. I can eat them in pureed soup but any other way I can't even tell if I like the taste because I find the texture to be just NO.
I saw purple sweet potatoes at Sprouts and decided to give them a try. I was hoping maybe the texture would be more pleasing. I just cut them in wedges and seasoned them with a little salt, pepper, and curry powder. This was my breakfast by the way. I dipped them in sweet chili sauce. I did not appreciate the texture of these either. It was a chore to force myself to eat them. When I see people just bake a sweet potato, cut in in half and not only eat it but enjoy it I feel so many things. Confusion, envy and a little blech are just three things I feel. I'm just going to have to make blended sweet potato soups and cheese sauce for longevity I guess.
Of course I had more carrot, orange and ginger juice! I got a great deal on cuties at Sprouts so I'm good on my favorite juice for the week.
I just can't seem to get enough peanut sauce! Rice, Romaine, sweet mini peppers and baked tofu smothered in sweet chili peanut sauce! It's just so simple and delicious and a great way to get in lots of veg!
My girls have been extra cuddle-y this winter! Kiki and Etta are really the dynamic duo of cuddling! I think they both could teach a Masterclass actually!

  1. Warm winter kitty snuggles!!! I would definitely imagine that winter kitty snuggles are the best kitty snuggles :)

    I wish I liked sweet potato more as well. I am ok with them in small doses but I do not like just baked sweet potatoes. I can deal with them as fries but fry anything and I'm in. The salad looks amazing and the juice is beautiful!

    1. I know. They're so healthy, and other people make them look sooooo good! I'm definitely going to make a sweet potato cheese sauce sometime!

  2. I swear i read the same article....! Although i was reading about the okimawa japan population, and their diet is based on the white sweet potato, which is often labeled as korean sweet potato- the inside is white and more dry, not as sweet as american sweet potatoes.
    I can only find them at asian markets. I think you would like them baked into fries with some spicy diping sauce. And if not then don’t make yourself eat sweet potatoes!
    I actually really liked sweet potato juice. Sounds weird and they don’t make much, but the bit of earthy flavor was nice with greens and lemon if you have more to use up.
    That salad tofu rice bowl with peanut sauce sounds SO GOOD !! I’m still stuck with delivery dinners while out of town for work during the week and would do **anything** for a fresh tasty dinner like that!

    1. The article I read was about the Okimawa people too! But this article mentioned the purple sweet potato. And then after that I read article after article! I know that there are white sweet potatoes I think they call them New Jersey sweet potatoes? I wonder if they're similar to the Korean potatoes?
      You know I have added sweet potato to juices. I like to add it to carrot orange juice!! Thanks for the reminder!

    2. Ha!! Yes the Okinawa eat white asian sweet potatoes (which have red skin and white not very sweet interior) as well as the purple ones which are high in antioxidants.
      I think the big takeaway was that the plant based carbs (potatoes) were significant vs grain based carbs (rice) that the rest of asia consumes more of.

  3. Boiling then baking may make the heathy sweet potato more appealing to you.

    Boiling before roasting should give your sweet potatoes a crispy-like-chips texture on the outside and a soft, sweet and buttery finish on the inside.

    Peel, slice and place your sweet potato slices in boiling salted water for 10 minutes. While your potatoes are boiling, preheat your oven to 450°.

    Prep your pan by adding 1 teaspoon of olive oil, 1/2 teaspoon of ground cumin, 1 teaspoon of balsamic vinegar and a generous grind of lemon pepper for every sweet potato you have. Then add salt-and-pepper.

    Add your drained sweet potatoes and mix with the oil and spices in your pan. Add 1 more teaspoon of oil on top before more salt, pepper and ground cumin to taste. Coat each of the sweet potato slices generously.

    Then put your potatoes in your oven for 15 minutes. Turn halfway through. Because temperatures vary as do the thickness of sweet potatoes, you might need more or less time, so keep an eye on them. A nice aroma coming from the oven as the sweet potatoes roast should fill your home.

    Pair with lentil curry or portobello mushrooms.

    If you try and like the recipe, you could use it in that budget meals book you're working on ;). I can't wait to buy a copy and to start saving some serious money on my vegan food! :)

  4. I get what you mean with the texture. It is more stringy than regular potatoes. If you have a orange flesh potato try making a cheese sauce with it. It is much tastier that way, and pureed!

    Also if you find the white fleshed sweet potatoes, give them a try. They are firmer and have a nuttier flavor.

    1. I do like them blended. I made a sweet potato curry soup once. I remember quite awhile ago making a sweet potato cheese sauce and i loved it. I'll definitely have to experiment more.
      I'll also grab a white one. I think I tried one way back when I lived in Erie. I remember it was also less sweet?

    2. I think so. The also need longer cooking time. So keep that in mind if you are using a recipe.

  6. If cheese sauce leads to longevity sign me up! My favorite way to have sweet potatoes is sliced and sauteed with some vegan butter, salt and pepper, and brown sugar. I'm not crazy about them in general, really, though. You're not alone.
