Cheap Vegan Eats plus Cats!

Yesterday for breakfast I made a delicious chickpea pancake and topped it with some sweet mini peppers tossed with Italian dressing. I love making these pancakes. You can add green onions and herbs to the batter which makes it even tastier. The pancakes are just made with chickpea flour and water. I always buy the Bob's Red Mill chickpea flour. It's under three dollars a bag and you can make a lot of pancakes with it!!
Keeping up with the budget theme, I made one of my favorite meals. red lentil and potato curry. I swear even if I could afford all the foods this simple meal would still be in my regular rotation. It's delicious, filling and so satisfying. It's also super easy to make and the leftovers are even better!
I just had the kitty from outside in my living room for a bit. He's getting more and more comfortable but he's still very skittish but I think he's kind of making the connection that inside equals warmth and also lots of pets. I keep telling the girls they're going to get a big brother.
Speaking of the girls, Etta and Kiki are still holding down the pink sweater. I keep hoping they'll lose interest, but they just keep loving it!

  1. Great looking budget meals!! The chickpea flour pancake looks delicious, I need some of that in my life! The curry sounds so comforting and I'm glad that the kitty seems to be getting a little more comfortable. The girls look so adorable!

  2. Those chickpea flour pancakes sound interesting. Only add water, eh? What is the cooked consistency? Are they super dry and flat? I want to try them, but I'm skeptical. More details, please.

    Also, I think you need to give up on that sweater. It's probably so embedded with cat hair now, you'll never be able to get it all out.

    1. When I first started making them the recipe I followed called for baking powder, but I don't use it anymore because honestly I don't notice a difference. They aren't really dry or too flat, they're definitely denser than a sweet pancake. You can make them really thin, but I like to make mine a little thicker.
      Oh I never wear that sweater, it's just I keep hoping I can take it off the bed, but I don't see than happening.

    2. Chickpea pancakes are awesome! Look up “socca” recipes- lots of ways to add additional flavors, and some are made very thin like crepes and others thicker and baked in the oven. Just water and mix but also add pinch of salt

  5. I love socca!! I haven’t been making it lately because no one has it in bulk bins near me and closest store with it is whole foods and it’s so overpriced there.
    That potato lentil curry is totally your “signature dish”! If you see japanese curry i think you would like it a lot, they make a mild and spicy one. It’s labeled “no meat/no fish” but it’s also vegan. Very different flavor from a thai curry and crazy delicious on just rice!

  6. Your chickpea pancakes make me feel inspired to try chickpea waffles again. Maybe make a batch, then freeze the extras and pop them into the toaster and top with some savory veggies.
