Mofo Marches On

Here is my Mason jar which I am using to collect all of my non food and non recycling waste for this week. I started Friday night so not too bad. I'm not trying to be perfect, I'm trying to do better and to kind of train myself to make better choices. Paper towels are a big one. If I spill water on the counter it's so easy to grab a paper towel when I have a dish towel right there! So it's been helping me be better in that way for sure. It's also made me more mindful when I shop. I saw a lemonade on sale that had blueberries and I really wanted to try it, but I just couldn't buy that big plastic jug.
I also saw this new to me kombucha and I really, really wanted to try it. I love trying new kombuchas and the raspberry lemon called my name, but I resisted the urge! Has anyone heard of or tried this brand?
Yes that is a pineapple top in the background. Kiki and Roxy like to chew on the top! I need a new pineapple!
Instead I bought this guy. It's a four serving size glass bottle that I will definitely reuse for water, and also to bottle my home brew kombucha when it's ready! I'm so excited for that!! I've never had this, it's pretty good. It has lavender and chamomile and it's very, very lightly flavored.
The black bean brownies were such a HIT that I made garbanzo bean blondies! I used this recipe with two changes. I used brown sugar instead of maple syrup, and instead of nut butter I made peanut butter with peanut powder. I couldn't find peanut butter that wasn't in plastic, and maple syrup is most definitely not in my budget! Like the black bean brownies these turned out rich and moist and better than any dessert with gluten free flour I've had. And there is no bean taste whatsoever, I promise!! I'm really amazed at everything you can do with beans!! I will say this, if you try this recipe I would add a flax egg. The black bean brownies called for two flax eggs and they held together better than these. These are just a little crumbly and I think a flax egg would help bigly. (Ha ha ) I just realized I accidentally followed a theme for Mofo, the prompt for today is baking without gluten!!!  What a happy little accident!
This was my very green inner last night. I made a little pea pesto with some frozen peas I've had for forever, and some basil from my little plant that is still alive!(!!??!) The pasta is some brown rice spaghetti I got in the bulk section, I also had a Romaine heart salad with Just Caesar. Yum and yum!!!!

  2. Chickpea blondies I have made before! It is pretty amazing how well they work, they were so dense and lovely.

    1. It is super amazing. I've seen dessert hummus in the store, it's dark chocolate and it terrified me, but now I'm a little curious!

  3. You and your bean based desserts! Awesome!! I have also been trying to train myself restraint with paper towels and save using them for only very icky things.
    The green dinner looks fantastic!

    1. I know! I once was terrified of bean based desserts! But hey, beans are tons cheaper than gluten free flour!
      Paper towels are kind of a hard habit to break!
