Living Without Gluten

Just to recap this week for Mofo I'm doing a thirty dollar budget and zero waste challenge. I had seven dollars left over and this is what I bought. The majority went to the bread. Although I'm doing my own Mofo theme this year, this weeks prompt is dietary and lifestyle restrictions. Since I have hypothyroidism I try to avoid gluten. I do cheat more often than I should but being gluten free is a serious struggle, at least for me. And gluten free anything is guaranteed to be double the price. Which is why I don't have bread often. It's also really hard to find gluten free bread that is vegan. Most I've looked at have honey or eggs. So I don't have a lot of sandwiches and I miss them so! I'm making lentil soup tonight and I have a need for a grilled cheese to go along with! I have tried B Free's wraps in the past and they are definitely the best gluten free wrap or tortilla I've tried. They are much more flexible which can be an issue for gluten free. I tried  a slice of this bread with some hummus this morning and I am SHOOKETH! It's great, it reminds me of a hearty wheat bread like Dave's Killer or something like that.
I like the longer slices too. I always like to make big veggie sandwiches with all the veggies and of course ten million condiments so the longer slices seem to be begging to be over stuffed!
I'm on a tight budget and it hurts when you splurge on something and it's gross. This B Freer bread is too expensive, and the loaf is too small, but it is hands down the best gluten free bread I've had! I will definitely fit this into my budget now and again.
Seemingly out of nowhere this little sunflower has bloomed from the concrete right by the gate that separates my apartment building and the alley. Beautiful and a fighter!

  2. That bread looks incredible! I think you do a great job sticking to gluten free. It has to be so difficult, I have tried so many times but I always fall off. Gorgeous sunflower!

    1. It is soooooooo difficult!! I get super frustrated sometimes which is when I usually justify a cheat!! But I'm trying to be better!
