Coconut Curry Hummus! No Packaging!

The daily prompt for Vegan Mofo today is Snacks without the packaging This so fits into my own budget theme, and then how perfect that I'm attempting a zero waste challenge!
Hummus is something that drives me insane because it is so incredibly cheap and easy to make at home, but it's just so easy and convenient to pay triple the price for the stuff in a tub. One of my favorite hummus brands is Hope Foods, specifically their Thai coconut curry hummus. It's a little bit spicy and a little bit sweet from the coconut. It's just a really interesting and satisfying flavor. And anything curry has my interest. Since I rarely buy it because of the packaging and price I decided awhile ago to try and come up with my own recipe and I think I'm pretty close. I did post the recipe back then, but I made another batch the other day and gave a little tweak. This is pretty stinking close to the original if you ask me!

                                                             Coconut Curry Hummus
  • 2 C. Cooked or 1 can chickpeas
  • 2 T. tahini
  • 5 T. unsweetened dried coconut shreds or flakes
  • juice of 1/2 lime
  • 1 t. curry powder
  • 1 tsp. salt 
  • 1/4 tsp. turmeric
  • 1/4 tsp. pepper
  • 1 T. sriracha
  • 1 tsp. agave necter
  • 1/4 plus 2 T. water
Add all ingredients to your food processor or blender and whiz away until it's all blended and smooth. Start with 1/4 cup water and add more if you need.
I can eat this hummus with a spoon! It really isn't very spicy an you could definitely a less sriracha of course!

  1. Oh wow! I bet this is delicious! What a creative flavor. It's so easy to make hummus at home and it always tastes better! I need to get out the food processor and make some soon :)

    1. Every time I make hummus I'm reminded how easy it is to make, but then I'll still buy a tub because it's just right there!!

  3. I love different flavours of hummus. You are right, it really is so easy and cheap to make. And yet, how often do I do it? Hardly ever! Must fix that.

  4. I actually finally found that brand Lantana hummus you have posted about before- and it was on clearance sale because they’re not going to carry it anymore! I got the beet and the edamame, although both were very mild on either of those flavors they were tasty, and at $1 each certainly worth it :))
    Coconut curry hummus sounds interesting, hard to imagine but certainly east enough! I actually tried a recipe last winter that you toss veggies in a mix of hummus and lemon juice with salt and pepper before roasting them- it’s crazy good! Makes like a little crust to the outside!

    1. I've never tried the beet because I don't care for beets, but I would definitely try it for one dollar!!!! Too bad you couldn't try the carrot sriracha, it's to die for!!!
      I've heard of coating veggies in hummus before roasting but I've never tried it. I think I'll have to try it with some broccoli an Brussels sprouts!

  5. I am the worst at making my own hummus. It is so easy to buy the tubs and NOT have to wash the food processor. But I like the flavor combo you have going.
