Black Beans all Day!

Zero waste week is off to a great start! I made these delicious black bean brownies! Except for a small amount of coconut oil, all the ingredients are from the bulk aisle! I used this recipe.  I didn't add walnuts and I used a pan instead of a muffin tin. I did use a handful of  chocolate chips but I stirred them in the batter instead of as a topping, These are super fudge-y and really, really rich. You would never in a million years guess they are made with black beans! I shared some with some non vegans and they were a hit, and no one guessed they were flour-less and made with beans! I will definitely be making these again!!

For dinner I made tofu with a garlic black bean sauce. You just add a little of the sauce with some water and cornstarch and bam, dinner!I added some crushed red pepper for heat.
Classic duo. Everything Kiki knows about forcing cuddles she learned from Etta. In Dylan's last years he was a bit of a grumpy old man and Etta would cuddle with him no matter how much he protested! She taught Kiki everything she knows an now no one is safe!
As I was snapping their picture, Joan noticed and posed extra cute so I of course had to get her too!

  1. I keep meaning to, but I've still never made black bean brownies; that's awesome that they were a hit with non-vegans! Also, your dinner looks amazing, and too much kitty cuteness!

    1. Try the brownie crisps from Trader Joe's. They're basically the crispy edges. And they're accidentally vegan!

  3. Mmm, I might have to try that brownie recipe. I've made a similar one before and remember it being good and I have just bought a load of discounted dried black beans!

  6. Have you tried putting a little peppermint extract into the brownie batter? It makes such yummy mint chocolate brownies.
