Vegan Marshmallows and Vegan Love

I was rewarded for my diligence and patience yesterday with vegan marshmallows! I found them at Trader Joe's! I haven't been this excited since getting my first package of Chao cheese! To be honest, I don't have a lot of experience with marshmallows besides s'mores and rice crispy treats which I already learned I don't like at all.. I do remember the first time I had a s'more was at girl scout camp, where I also discovered a deep love and connection to horses. I remember the first bite of that s'more, and never wanting that moment to end. As I've mentioned, I was raised in a typical "crunchy" way. If my mom would have made s'mores. it would have probably involved carob being spread on a barley cracker, and I don't know what the substitution for marshmallow would have been. So, yea, it was an exciting moment. I don't know how easy it is to find vegan graham crackers, but I guess I need to start the hunt! I wonder what else I can do with marshmallows?

I really wanted to grab some more mango mochi, but those dang Seattle vegans bought them all! There was a huge empty hole in the freezer case where they should have been! I feel scared of the mango bon bons, which are mango sorbet dipped in dark chocolate. I have a hard time picturing those flavors together. But, for a long time I was scared of chocolate and orange together, and now I love it. Maybe one day I will be brave!

For some reason I forgot to include shredded carrots, two avocados, and lemons in the picture. Both yellow and pink lemons. I am loving the pink lemons! I add a whole one to my morning water, and it tastes like a less toxic, much more natural Country Time pink lemonade!
I made a really delicious Thai red curry dish last night! I finally used the correct amount of the red curry paste. Curry is something I sometimes fail at because I don't use the right amount, and I try to fix it and usually make it worse.
I let the veggies (mushrooms, garlic and onion) simmer in the curry mixture while the tofu baked, and then added it to the mix. I used two tablespoons of the paste, and it was perfect. I added a little crushed red pepper while it was cooking because I like it spicy, and of course sriracha at the end. This was really tasty, and I didn't have to go to a restaurant! The fresh basil at the end really added that final touch. I love the Thai kitchen red curry paste. You can really smell the lemongrass! The green and red curry paste is vegan, but they also make a yellow paste that does contain fish sauce so that one isn't safe.
Before I sign off, I wanted to mention that I definitely feel a shift towards a more vegan friendly, and even vegan earth. My veganism has come up several times in random conversations with strangers, and every stranger has said, oh yeah, I know so and so is vegan, whether it's a relative or friend. It seems like only a few years ago when even in Seattle if I mentioned I was vegan,  I got a lot of questions, and a lot of "I could never be vegan" or even "what is vegan" So, not only are vegans becoming more accepted, but it is becoming more common. It's not nearly enough, but it is progress.

    1. I don't have a lot of experience with vegan marshmallows either! I actually didn't eat marshmallows that often as a kid either!

  2. I think a lot of brand name Graham Crackers are vegan (watch out for honey). I remember having a box of Barbara's brand a while ago. Hope the Marshmallows are as you remember.

    1. I do remember making smores with Hershey bars, which I was always told was the ONLY chocolate to use, but the good news is I barely remember the taste! I just need to find the the creamiest dark chocolate bar!

  3. The original nabisco grahams in the red box are vegan- you can smores in the oven with the broiler! I like to freeze the marshmellows and snack on them, they get this chewy taffy like texture that's great.

  4. Yay, you found them!! I can't wait to see how your s'mores come out! I'm still searching for them. Were they affordable? And by affordable I mean at least cheaper than the $7 I would pay for Dandies?

    The rest of the haul looks really great too! I just love Trader Joes! Hopefully you'll be able to get your hands on more Mango Mochi. I still haven't tried mine :X

    1. They were very affordable, especially compared to dandies! I can't remember, they were either $2.49 or $2.99 a bag! I really hope they restock the mochi too!

  6. Our Chinese supermarkets in Manchester all stock this brand of frozen mochi. Wondering if it might be worth checking them out if you have any near you?
