Thanksliving Dinner

I hope everyone who celebrates had a wonderful holiday. Mine was low key and filled with emotions that I won't get into here. But I did take care of myself throughout the day. I did a really tough upper body workout in the morning and played some string, and tinkered in the kitchen. I made stuffing and mashed potatoes with a roasted garlic and parsnip gravy. I used this recipe from Whole Foods. It's a thick and rich gravy. It's a tasty gravy but I feel like I like thinner gravies for mashed potatoes. This seems more suited for biscuits. I don't know, I am certainly no expert on gravy. I was going to make collard greens too, but I only have two pots and I had already had to wash to reuse several times and laziness took over. Le sigh. As I was eating I realized that American food is my least favorite cuisine. I'll choose anything over a diner any day. I like spicy, citrus-y strong flavors. If I make another holiday meal, I'm cooking outside of the boring box for sure. I made oil and vegan butter free stuffing, and I'm happy to say it was still tasty, and I barely noticed a difference to be honest. The one thing I did miss in my stuffing was sage! When I was at the store on Tuesday, I was standing at the bulk spices getting dried thyme, and I knew I needed something else, and I was just too flustered to think clearly. I feel sage is the most important herb for stuffing. All in all it was a tasty dinner, and my kitties were all the company I could ask for! There were no political arguments at my table, and no one had to bite their tongues!

  1. Sounds like a lovely meal, even if the gravy was a bit thick.
    I was looking through Vegan Eats World for the Tandoori Tofu recipe (I have some yoghurt and some tofu awaiting their fate), and noticed that it is part of an Indian Thanksgiving Menu in the back of the book. The whole menu would indeed take many pots, but it is a fun thought! I am just going to make my tofu as a stand alone weeknight dinner, though.

    1. I tried a Tandoori tofu g=from a book from the library, I wonder if it was Vegan Eats World, maybe it was. It was seriously the most delicious tofu ever. I need to check out that book again! I hope you love it so much!

  3. This sounds like lovely, tasty comforting food. I really like the sound of that gravy. US gravy is so different to what we call gravy in England!

    1. I just looked up gravy on Wikipedia, and if I'm reading correctly I think I prefer gravy how you have gravy. But I'm interested in the differences!

  4. The mashed potatoes and stuffing are the whole point of thanksgiving!! I'm impressed you made gravy, if you have leftovers i'm sure you could thin it just whisking in some veg broth or almond milk.
    Yeah, sage really is that herb that says stuffing when you taste it. I'm sure you could come up with a very creative ethnic thanksgiving menu! I am always looks for something more exciting, most recently i'm back to my obsession with asian flavors of ginger/sesame/soy/nori/miso.....

  5. I am so with you on the Asian flavors. I also really love lemongrass. When I first discovered Vietnamese food in Seattle, it made me fall in love with the fresh bright taste of lemongrass.
