Pupusas Revisited

Well, I made pupusas again last night, this time cooking them on the stove top instead of the oven and they turned out much better. They get a nice little crispy outer layer, and nice and soft on the inside. Pupusas are seriously easy to make, masa flour is very inexpensive, and they're very delicious! I also think they'd be a great thing to make for friends because they're kind of unusual could really wow and impress without a lot of time. I found masa at a regular grocery for under two dollars for a two or three pound bag so like I said, super economical! As promised I have the recipe and I really hope you try them. I didn't use vegan cheese this time, but I have made them with vegan cheese which just adds an extra layer of deliciousness!

                                                Black Bean and Corn Pupusas
  • 3 C. Masa Harina Flour
  • 3/4 Tsp. Salt
  • 1/2 Tsp. Pepper
  • 2 1/2 C. Water
  • Mix all these ingredients together until you have a dough ball. Let the ball rest while you prepare the filling.
  • 3/4 C. Fresh or Frozen Corn
  • 1 C. Black Beans
  • 1/2 Tsp. Salt
  • 1/2 Tsp. Cumin
  • 2 Sliced Green Onions
  • 2 T. Minced Cilantro
  • 2 T. Nutritional Yeast
  • 1 1/2 T. Hot Sauce (optional)
Once you have the filling all mixed together, take your dough and make little balls. I got nine out of my dough. You want them to be about the size of vegan meatballs. Make a little hole in the center of the ball, and put in a little under a tablespoon full of the filling. Gently fold the dough over the filling and then flatten the ball into a disc.
Once you have all your discs made, heat a little coconut oil, or your oil of choice in a skillet on medium heat and cook the pupusas for three to four minutes on each side. You want them lightly browned but not too brown. Traditionally these are served with curtido which is basically a vinegar based slaw, but I forgot to get cabbage so I made a little salsa with sweet onion, jalapeno and cilantro and had a green salad on the side. Such a delicious dinner!
Masa dough is so easy to work with too. It's pliable, and it doesn't get all sticky and stick to your hands and everything else either. Like I said these couldn't be easier to make.
You will probably have some leftover filling just like I had, and it makes a great quesadilla filling too! These made a great quick breakfast this morning!
Afro loves sleeping on my flip flops. They have become like her security blanket or something. I also usually kick them off near the door, and she loves sleeping by the door waiting for her chance to go outside. Silly girl!

  1. Oh yeah - those look nice. I actually have a bag of corn flour kicking around in my pantry so I need to make those this week. Personally, I think mine'll definitely include the Daiya. Thanks for the recipe.

    1. I hope you like them as much as I do! They are really good with a little daiya thrown in. They're also super delicious with a little avocado or guacamole!

  2. Hahaha what's up with cats and flip flops? Mine love flip flops too! I've never made pupusas, but those sound so easy and delicious! I will have to give it a try. I have a bag of masa in my deep freezer.

      I thought Afro was just my little flip flop weirdo, nice to know she's not alone in her obsession!

  3. Going to have to give these a try, they look even better than the last ones you made. I meant to mention that you are the reason I finally tried Daiya cheese and love it now. I had bought it before and didn't like the smell when I opened it so I gave it away. It was after I started reading your blog that I finally gave it another chance. I just wanted to tell you that because people make a difference in other peoples lives without even knowing it some times :)

    1. These were definitely better. Stove top is the way to go with pupusas I've learned!
      Thank you so much for telling me that. That really makes my day to be honest. And I can definitely see why the smell scared you. Daiya definitely needs to be cooked! Unless you can find the smoked Gouda block which is delicious cold. Have you ever tried Chao cheese? It's made by field roast and it's so amazing cold right out of the package.

    2. I have tried the Chao in a grilled cheese sandwich but never cold. I will try that soon. One of my favorite pre vegan things was a snack of fresh from the garden tomatoes on a ritz cracker with cheddar cheese. I will try that with Chao, thanks again. I feel it's important that we know how we lift each other up. I admire you and all the vegan bloggers. Always wanted to blog but never have gotten brave enough to do so. My life is so boring lol.

    3. That snack sounds perfect with Chao!I'll have to try that myself when the tomatoes get really good this summer.
      You should think about blogging! I was so scared but now I love it so much and it has really been a great addition to my life, and I've met so many wonderful people online!!

    That's so funny, my friend's cat is also obsessed with flip flops. Whenever I go visit he attacks my flip flops immediately!

  5. I guess I never knew what a Pupusa was, just assumed it was something with meat. They do seem like a fun and easy treat. You are really becoming an expert in international cuisine!

    1. I'm sure lots of places sell them with meatier fillings. I might try a jackfruit/ pulled pork type of filling next.
      I do like to experiment with different cuisines that's for sure!!

  7. These look so nice. I have a huge bag of masa harina sitting dormant in my cupboard. I really must bust it out and make some things (assuming bugs haven't been eating it!).

    1. I know you're not gluten free, but it makes a really nice pizza crust too. Just use the same dough and flatten it out for pizza. I made a Mexican style pizza a while ago and it was so tasty!!

    2. It makes a great pizza crust. I forgot to mention to bake the crust alone for like fifteen or twenty minutes, and then add the toppings. It needs a little alone time in the oven to firm up!

  8. Must be your smell she loves so much. My cat does some similar stuff where she loves my dirty clothes- the nastier the better. It would drive me nuts.
