Sweet Chilli Hummus

 I don't know if you can see that squirrel, (tiny little brown spot on the wire) but it had a stare off with Afro yesterday morning, and it lasted quite awhile. It was really cute. I chatted with him/her a bit, so I hope this becomes a regular thing!
I had to get cat food yesterday, and so I picked up some cilantro, green onion, sweet chili sauce, and also a condiment that has been the talk of vegan YouTube for awhile, Gochujang. Everything about it seems right up my alley, so I had to get it.
Chili powder, paprika(in tea bags), chocolate chip cookies on super sale,cucumber,bulk raw sugar,cilantro,green onion,tomato paste, green olives,soy sauce, and Gochujang.

I'm going to make a rice bowl with seaweed, or seaweed wraps tonight, and I'm going to make a dipping sauce using this. I can't wait to experiment!
I also made a delicious hummus yesterday, and I actually wrote down the recipe! I love having more counterspace in my kitchen, I have room for cooking and notebooks. I'm also actually grateful to be on a budget, and trying to cut down on waste, because I was reminded how freaking easy it is to make your own hummus. Even with a blender! It only takes minutes, and it is sooooooo much cheaper!!

Better than Sabra!!

                                                           Sweet Chili Hummus
  • 2 Cups Cooked Chickpeas
  • S&P to taste
  • 2 T. tahini
  • Juice of 1/2 large lemon
  • 1 tsp. sriracha (optional)
  • 3 T. Sweet Chili Sauce
Blend all ingredients until smooth and creamy. I use a blender, so I used between 1/4 and 1/2 cup of water to get everything going. If you have a food processor, it should be good without the water.

This hummus is really tasty! It's spicy, and lemony and a little sweet. I had some slathered on a pita this morning with some raw veggies. It was really tasty. So far budget eating is off to a great start!
I'll be back tomorrow with some pictures of what I've been eating the last couple of days, and also hopefully a review of Gochujang!
All five of them are finally on the couch at one time!!

                                                               
Sorry that I can't blog without posting cat pictures. I just love them so much, and I feel like I'll never get used to seeing their faces again. Living with Derek for those two weeks was not only the worst because he is the WORST person to be around when you're hurting, but waking up and not having anyone to feed or to trip over was torture. And they're just always doing the cutest things!

  1. I'm going to try your hummus recipe. I love your cat pictures. My husband and I also have five cats and they are so precious, loving, funny and wonderful. They make our lives so much better. Best wishes from our cat house to yours.

  4. haha that photo of the cat and squirrel makes me think of my cat. The other day she tried to sit on my lap but heard a bird and had a huge dilemma of getting pets or look at the bird.... the window won.
