Some Delicious Vegan Food I've Been Eating

These are some fast tofu nuggets I made the other day before work. I really like the high protein tofu from Trader Joe's because it's less packaging and it isn't packed in water so you don't need to press it at all. An it bakes up nice and firm. I seasoned the "nuggets" with nooch, garlic and onion powder, and salt and pepper. I dipped them in Just Mayo and green dragon sauce.  Delicious.
Here are some delicious homemade oven fries I had another day for lunch. I seasoned these with smoked paprika, turmeric and salt and pepper. Dipped in sriracha just mayo. Always one of my favorite meals!
The same day I had the homemade fries for lunch, I had frozen crinkle cut fries dipped in ketchup for dinner. Always a classic quick meal in my book.
This meal goes against my quest to live a lower waste lifestyle. I had a horrible night on Saturday so daiya mac and cheese to the creamy, comforting rescue. I am not the biggest fan of the taste of the daiya mac, but I do love the texture. I definitely like the Alfredo style better than the cheddar. It has a little less of that daiya flavor. My picture looks like cottage cheese! I was too tired to care I guess!
Here is a smoothie combo I've been enjoying. Frozen strawberries and blueberries, banana, spinach, and maca powder. My leftover from Valentine's day discount flowers are still in full bloom!
I snacked on these while cleaning my apartment yesterday. I love them so, so much! Definitely one of my favorite crunchy snacks.
This was my dinner last night. Cilantro rice with black beans and soy curls seasoned with crushed red pepper, turmeric, garlic and smoked paprika. I also used this Salsa Queen red chili salsa. It's made in Utah and packs quite the punch!I like it. This meal would have been perfect with some avocado and green onion. But I am trying really hard not to buy stuff in between grocery trips. Since I work at a grocery store it would be really easy to get into a habit of buying something every night, an that couple of dollars every day adds up. I see it with a lot of my coworkers and I cringe at how much of their paycheck they're handing right back. Anyway even without something fresh an green this was really tasty. I'm so glad Natural Grocers carries soy curls now. They have become one of my favorite foods ever.
And here is Miss Joan letting me know that the tapestry/rug thing definitely stays! And also the table top is to remain empty! I was going to have a lamp on the table an have it be all cozy but unfortunately my interior designers have spoken!
Before I sign off I want to say Thank You so much for the support on yesterday's post. It means so much to me. Like I said I read the comment while at work an it was right after an EXTREMELY rude customer unloaded on me and it got to me. But we all make mistakes, and we are all trying to do the best we can do. I appreciate you guys so much!

    Nope, the cats won’t like a lamp on their favorite table. That really cracks me up!

    TJs high protein tofu has seriously ruined me for any other. It’s so great to not have to press it or worry it’s water logged or will fall apart. I like to cube it and saute in a pan with some soyaki but of course it’s great baked and with nooch too.
    I’m impressed with how creative you are with the various ways to have potatoes! That’s true love.

      I so agree with you about the Trader Joe's high protein tofu. It's so firm. People who hate the texture of tofu need to try that one!

  4. Big vegan hugs! I hope that you are feeling better! You've been eating some seriously delicious meals! Your oven fries are seriously incredibly and I'm so with you… Daiya mac is not great but the texture is good and the Alfredo is far superior to the cheddar. Inner peas are seriously addictive and I definitely need to try the high protein tofu!

    1. Inner peas are so good. It's so easy to eat the whole bag in one day!
      The high protein tofu is seriously the best. It has a great texture and it's so easy to work with. It holds up really well in a stir fry, it doesn't crumble. It's definitely worth the extra fifty cents!

    I am guessing the Trader Joe's high protein tofu is a lot like the super firm tofu I get at my local HMart (Korean market) I love it, it is quick to use, fabulous for stir fries, and it happens to be made in Philadelphia so it is local for me!

    1. My name may be on the lease but they know who runs the house!
      It's so good. I saw a recipe for vegan crab salad and she shredded the tofu on a box grater. I think this tofu would be perfect for that! Sometimes the water packed tofu crumbles when I try to use it for stir fries too.
