Nada Moo, Vegan Hauls and More!

After I had tried the Nada Moo ice cream at Harmon's a few weeks back, I sent an Email to the company telling them that I fell in love with their ice cream, and also telling them that they should have samplings at every store because a lot of non vegans might taste it and be encouraged to buy Nada Moo because it's so freaking amazing. They sent me some coupons as a thank you, so yesterday I picked up these two flavors. I was going to get pistachio because I haven't had pistachio in a thousand years, but Harmon's was out of that flavor. They did have salted caramel, and also birthday cake cookie dough!!!! I tasted both when I got home and all I can say is WOW!!!! The birthday cake has sprinkles and chunks of birthday cake dough!!!!! And anytime I can find vegan caramel anything I'm all in. They are so so creamy I really don't think any non vegan  would guess in a million years that this is vegan ice cream!! Nada Moo makes me say Ben and Jerry who?

My usual Trader Joe's haul. I saw someone post about the olive tapenade on Instagram and I had to try it. It's only $1.99 a jar which is a steal for olive tapenade. I also remembered spinach this time!

I forgot to pick up the 21 seasoning salute from Trader Joe's, so I got some Spike seasoning for my potatoes and such. I also decided to try the Barilla gluten free pasta since it was the same price as my usual Ronzoni.
I had planned on making an enchilada casserole for dinner, but I had a long day and just wanted to eat when I got home. So, I cooked up some of the gluten free penne, and stirred in some great northern beans and olive tapenade. I also added crushed red pepper and nooch. This was really tasty. The Barilla gluten free pasta is really good. It tastes very similar to regular pasta which is a big plus for me. And the olive tapenade is soooooo delicious.This was a very quick and easy meal that tasted fancy and expensive. The tapenade would be great as a pizza sauce or topping, and also great on some crunchy bread. It's also great eaten right off the spoon.
This morning I tackled a fear of mine and made homemade baked tortilla chips. Years ago I attempted to make baked tortilla chips, and they were crunchy on the outside but kind of chewy on the inside and I hated the texture. I've been scared to try again ever since. But I made this delicious lentil tomato, potato soup for breakfast and I was missing bread so I decided to try tortilla chips again, and they turned out perfect! And they're oil and salt free to boot! I just baked them at 400 degrees for about ten or fifteen minutes. I may never buy tortilla chips again! I added a dollop of the tapenade to the soup and it was amazing!
And here's Joan in another of her favorite spots. The bottom shelf of my bathroom shelves is the kitty rest zone. She loves the bathroom for some reason!

    1. I actually prefer it over both. I mean, all three are delicious but I really feel like coconut milk makes the creamiest ice cream, and also Nada Moo has such a great selection of flavors. They even have a pistachio which I plan in hunting down. I've never seen vegan pistachio ice cream. They also have rockiest road, and cherry fudge brownie which I've heard is like Cherry Garcia. Plus the ice cream doesn't have palm oil which I've been trying to avoid. As you can tell I'm a huge fan.

    1. I can't believe how tasty homemade tortilla chips are! I made some again today to go with my leftover lentil soup. It's really helping me with my bread and cracker cravings! And I don't even miss the salt or oil at all!

    2. I can't recall specifically, however I think it was just pushing the too coconut fatty for me envelope.
      I really wish there were more companies bringing out new cashew/almond/soy based options!

    3. I'm surprised more companies aren't using cashew milk, because I think after coconut milk that makes the creamiest ice cream, and most similar to dairy ice cream.
