This was such a tasty dinner. I cooked some green lentils, drained them and then simmered them with some Kansas style smoky BBQ sauce from Trader Joe's. I topped baked potatoes with the lentils and also homemade cashew sour cream. This was my first attempt at homemade sour cream and it was a smashing success! I didn't write anything down, but it's just soaked cashews, a pinch of salt and apple cider vinegar. Even though cashews are pricey, this was still cheaper than store bought vegan sour cream, and much tastier. I realized when I was putting the dish together that it would have been amazing with some coleslaw on top, but I had no cabbage. I will definitely do that next time I make this, and there will be a next time for sure! This was super easy, super cheap and very filling and delicious. Lentils and potatoes are such great and versatile foods if you're on a budget.
Here's another not green smoothie. I can't forget spinach this week! This had banana, frozen mango, frozen blackberries, hemp seeds and maca powder. Very tasty and beautiful!
I'm still on the kitchari kick. I have definitely perfected my recipe at this point. It's just so filling and satisfying, and it keeps you full for a long time. And it tastes better the next day. Another great example of a very inexpensive meal. I like to top mine with cilantro, green onion and green dragon sauce plus sriracha. I love the spice!
And here's Afro being a little vegan ham. I was taking pictures of my kitchari, and she started rolling around and being adorable, letting me know she wanted her picture taken too! She and Roxy are my little models, the rest I have to be very sneaky and fast to get a good picture! Notice the shreds of paper she's laying on!
Hi again- well, we did get snow, but by the weekend it might be close to 70. Hope you have a good weekend. My weekend includes a funeral, so I will be traveling for that. It seems that there are just too many deaths lately. I am thankful that my belief in Heaven doesn't make death the end.

DeleteThose loaded baked potatoes look incredible. You are so creative with your different ways of cooking potatoes! The smoothie is a very pretty color. I love blackberries but I find it hard to enjoy them in smoothies because the seeds make it a weird texture.

I agree with you about the seeds. I find if I use only a few it's okay, but in this smoothie I used a lot and it was kind of off putting.

ReplyDeleteYes, the paper fort has become paper shreds. But they freak out if they think I'm going to get rid of it, so it stays.
