All day yesterday I was craving rice with tofu. Especially the rice. I wanted something a little more exciting than just oven baked tofu with rice which is what I usually do. I noticed that I had a small amount of Korean BBQ sauce from Trader Joe's. I had maybe two tablespoons worth. So, I mixed that with some hoisin sauce, sriracha and a little soy sauce to thin it out. I baked my tofu plain for about twenty minutes to get that nice chewy texture I like, and then poured over my spicy hoisin BBQ sauce and baked it while I cooked my Jasmine rice. I enjoyed both with a little Romaine salad topped with peanut vinaigrette also from Trader Joe's. This was a really easy and very delicious meal. Everything worked really well together, and I love the mixture of textures and temperatures. I also love meals that come from tossing a little of this and a little of that together. It's how I learned how to cook.

Kanye likes to hog the string, and yesterday she found a very adorable way of keeping it all to herself. I can't get enough of that belly!!
Here's Joan and Roxy watching a bird video. They were both totally captivated for over thirty minutes! And that is a miracle for Joan, she's kind of an all around spazz who gets distracted very easily!
My cat, Snickers watches TV, especially when an animal is on. Oh, what to cook for supper-maybe another baked potato- ha ha- that'd be okay with me. Have a good day- rain again in our forecast- April showers bring May flowers and allergies.
