I love it When I'm Wrong!

Good morning world!
I started the day with this salad, and as usual when I have a salad for breakfast, I felt amazing! This one had Romaine and iceberg lettuce, carrots, Micro greens, sesame stix, sunflower seeds, and hemp seeds. All tossed with balsamic vinaigrette. I don't eat it often, but I enjoy iceberg lettuce for a couple of reasons. The first one being that it reminds me of my grandparents, and also I really enjoy the crispness and light flavor. I like it with big salads with lots of veggies. It allows other flavors to stand out. I know it's the least healthy of the greens, but I still enjoy it every now and again.
I learned a lesson in judging and assuming yesterday. I went to Trader Joe's to exchange my refried beans for vegetarian refried beans yesterday, and when I was walking to the bus stop, I walked by a food truck with bones in the title. I loathe restaurants with bones in the title. I try not to judge meat eaters, but I am only human and sometimes I just can't help myself. Anyway, I braced myself for the smell of death when you walk by a place like this, and imagine my surprise when I saw it was a vegan food truck! Woot woot!
I would have loved to chat with them, and look at the menu, but I was in a crunch to catch my bus. After a quick peek at their website, I'm going to hunt them down one of these days, and do my very first food truck review! They are in Ballard, and that is my very favorite part of Seattle, and I won't get lost! Ha ha! This will be very fun, and I will feel very professional! It's just so exciting, and I love it when bones in the name doesn't mean death!
I had these soy curls in my cupboard, and a craving for burritos, so I decided to use these for the first time. I soaked some of the curls in warm water for about fifteen minutes, drained them and then sauteed them in a pan with some garlic, salt, pepper, and a little cumin. Once they were heated through I tossed in some Hatch chili salsa. I now see what the fuss was about. I thought these would have that TVP taste, but they don't. The texture is meaty without being meat like, if that makes sense. These weren't very pricey at Vegan Haven which is the only store I've seen them in, I think they're sold mostly online. Any way, I am late to the party, but I am here for the curls!
I mixed some refried beans and brown rice together with some green onion, and made a delicious burrito! I also experimented and added a little smoked Gouda style daiya, and it totally worked! The smoky flavor complimented the burrito perfectly!
This was a super inexpensive, super delicious, super filling burrito. This picture does not do it justice. There are so many things I'm trying to do to improve everything about my life, and trying to improve my photos is high on that list. I'm not sure when it will happen, but it will!
One last thing I wanted to mention. I have started a second blog. It's in the very early stages, and I don't have a clear path yet, but for now I will be talking about non vegan issues such as ex boyfriends, what I've learned from past relationships, ranting about politics, I'm sure I will touch on body issues, I might go deeper into my eating disorder story, I don't know where all it will go, but I can't wait to find out. I've been thinking of starting a second blog for awhile, and for some reason I felt very inspired to start it yesterday. Here is the first post, there are three so far. Like I said, it's a work in progress, and I have just recently really discovered I enjoy writing! So I'm doing more of it. It feels way more productive than getting drunk and smoking cigarettes!

  1. I bought a case of Soy Curls about five years ago but could never do much with them like I see on other people's blogs. That is cool about the food truck. I love food trucks. Back in Virginia I toyed with the idea of having my own vegan truck but now realize it is more work than I am cut out for.

  2. I really liked the soy curls. I'm going to do some type of BBQ "pulled pork" type of thing with the rest of the bag. I can't wait to try some of the food from the truck! I agree i think it would be a lot of work and stress.

  4. The soy curls are really amazing. The texture is meaty without being meaty, and just wow. I'm going to get some food from the truck sometime this week and do a review! Woot Woot!

  5. I haven't tried soy curls yet, but it seems there is a lot of talk about them. I am a buy in store type of person, so if I ever find them I would buy them.

    That food truck looks awesome, AND ORGANIZED! I love how they have a big calendar and everything! There is an ice cream shop I love called Little Babies, and they never tell you ahead of time when they will be at events until it is done, and you are like "this does nothing for me!"

  6. The soy curls are so good, I seriously understand the fuss now! I think I'm goint to try to find that food truck tomorrow and try something. I think it will be delicious!
