Burrito Remix!

I love the library!
I found this book at the library the other day and I'm excited to read it. I'm always wanting to brush up on information and facts, because I am one to easily get tongue tied when dealing with skeptics. So, the more logical facts I have swirling around my head, the easier it will be. I hope, or I should say keep hoping. You can also see a Scrappy leg. I wouldn't want to do anything without a kitty now would I ? I love that the book is well worn, with plenty of pages dog-eared. It just proves that we need to keep fighting for animals.
Last night for dinner I had some of the bean and rice burrito mixture left over from the night before. I wanted to use it, but I didn't really want burritos again. So, I decided to make a burrito casserole, Mexican lasagna, I don't know what to call it, but I loved it! I just layered tortillas with the bean mixture, green chili salsa, cashew cream, and a little smoked Gouda daiya. Yum.
I also added green onion and cilantro to the layers because green onion and cilantro. The smoky daiya really compliments the green salsa.
You can't deny the melt!
I had to show a close-up of the ooey gooey melt! I still remember the dark days of vegan cheese. The days when you just preferred a cheese free life if you were vegan. The melt always amazes me, and I will never take it for granted!
I watched a short video yesterday that featured a 100 year old man who is a retired heart surgeon, who only retired like five years ago or something. He was so alert and clear headed when he was talking to the interviewer. He looked vital and healthy. They showed him mowing his lawn(!!) and being active and spry. It was so amazing! He attributed his vitality to being vegan, and not allowing himself to get bogged down by stress. I found it to be sooooooooooo inspiring. I don't want to be dealing with health issues, and not being able to get around as I age. I want to be vibrant, and full of cheer and wisdom! And life is hard, I want to be able to enjoy and celebrate that I've made it that far!
It's inspired me to make a conscience effort to let go of what doesn't serve me. Stress does horrible things to our bodies. I didn't think I was going to be able to find the link because I randomly saw it on Twitter, but yay! I found it. Here it is. It's short, under two minutes but it really makes an impact. I want to meet that man, I feel like I could learn a lot!

  2. So far I'm really enjoying it. It even has some recipes. I just like to have facts in my head so I don't lose it when people challenge me.

I think studying "vegan facts" is great because I found myself not defending myself when people would say things like "you need meat because something aren't found anywhere else" but now I know exactly what to say. I am still trying to build a convincing defense for honey... which is hard because it is probably the hardest thing to give up as a vegan (so sneaky! getting into things)

    1. I agree. I have trouble dealing with people who just want to argue against veganism. Even if i have facts in my head, I get so flustered they just go away, and i think of them later.
      Honey is the worst. It is so hard to find whole wheat bread that doesn't have honey in it.

    2. Yeah, my husband is mostly vegan, he doesn't seem to care about the bee issue, so we still get whole wheat bread with honey. I rarely eat sandwiches so I can't rationalize buying a whole new loaf for me. The other hard part is honey in booze. Mead is making a revival and I use to drink and make it. I would like to try and make a vegan mead one day.

      The funny thing is that the first time I took the "we need to eat meat because there are some things in it that aren't in vegan foods" personally is from my mother in law, who I think is in denial about being a vegetarian. XD She is really supportive about Jon and I being vegan, I think it is just her rationalization why we eat cute pigs.

  4. I got a pizza from Trader Joe's that was vegan, except for honey, which I had missed. I noticed the honey in the ingredients once it was in the oven. I guess the vegan police will have to fine me, because I can't afford to waste food! Now I know for the next time. I'm interested if you make a vegan Mead!

    1. NOOOOO!!!! I've gotten that pizza a few times, and I guess honey got passed over, or I got before I was transitioning out of honey and forgot about it. *sigh* Trader Joe's is going to get a very angry letter from me.

  5. I was so surprised because i figured it was just the Amy's pizza with their label, so i never even read the ingredient list at the store. Sometimes it's so busy there I feel rushed, and I thought for sure this was safe. It just seems to me like why even put it in there, it isn't necessary. Very frustrating.
