King of the Mushrooms!

This was my delicious dinner last night. It came together in under fifteen minutes and tasted like a restaurant dish! I just shredded the king oyster mushrooms and gave them a quick saute in a little coconut oil, then added some hoisin sauce an a few strips of fried tofu. The mushrooms are chewy and dense and soak up the sauce really well. And I find mushrooms to be filling unlike jackfruit which I can eat a whole can and be hungry ten minutes later.
I was searching the webz for different ways to use king oyster mushrooms, and I came across this really nice looking recipe for ribs!! I might try that next time! Bosh TV has a ton of awesome recipes by the way. They make some fancy and more complicate dishes, but they also make a ton of really simple and inexpensive dishes. I love them!
Laundry never put away.. check!!
Poor Joan had the whole pink sweater and the bed to herself, until Kiki the queen of the lounge came along and made herself at home!
Happy Caturday!!

    1. Thank you so much.
I've seen people slice the King Oyster mushrooms and cook and serve them like scallops. I might try that next, but I've never ha scallops so I'll have to find a recipe.

  2. That photo of Kiki and Joan (with the Etta cameo) is priceless! It looks like a WWE match. And...are those your flip flops creeping in back there or am I imagining it?

    1. Ha, Kiki was the clear winner in that contest!
No flip flops this time, just cat toys, a scarf and laundry!

    1. I know. I don't know why the funny expression, I take it as she feels really proud of herself for forcing Joan to cuddle!

  4. Nice!! That sounds so delicious, especially with the addition of the tofu. Those mushrooms are so good, i just wish i was closer to an asian market to buy them constantly!
Maybe i need mushroom seasoning in my life and i just don’t know it yet...?? I will investigate on next trip to chinatown.

    1. I know, I wish the Asian market were closer to me too!!
I think you do need the mushroom seasoning. I swear it's helped me to cut back on salt because it really does enhance the flavor of food with no salt. I add it to sauces and curries and soups. I know Trader Joe's sells a mushroom umami seasoning, but I'm not sure if it's exactly the same thing.

  5. Your mushroom/tofu combo dish really does look like a delicious meal from a fancy restaurant! Great photograph! :).

Also wondering if you have any experience with this celery juice detoxing that's been going around the vegan community? Thanks.

    1. Wow, thank you, that's really sweet!
I have heard the rumblings of the benefits of celery juice and I did try plain celery juice but it's just too salty. I've been adding celery to my carrot orange juice. I do feel like my digestion is a little better when I have it, but I don't notice any other life changing benefits. Although to be fair I think you're supposed to have straight celery juice on an empty stomach. Have you tried it?

    2. You’re welcome :).
I might try it for a week and see if I notice any benefits. It’s just one glass of juice a day so I’m guessing it shouldn’t be too much trouble. Except maybe for the cost b/c people are buying cases of celery stalks now instead of bananas! lol :)

    3. Ha, I've been reading about grocery stores selling out of celery! I have watched a few videos on YouTube and people do seem to feel great drinking it.
Good luck and I'm eager to hear what you think!

  6. That looks so good! I love these mushrooms, and I love getting them cheap from the Asian grocery shop. I have made scallops with them, and also sauteed them for different salads or pasta dishes. But there are so many more ways, I haven't seen them shredded before!

    1. I've never seen king oyster mushrooms at a regular grocery store. But I can only imagine they'd probably be like three times the price!!!
