Lots of Stuff

When I got home yesterday there was a very heavy box waiting for me, and it turned out to be the pamphlets I'm going to be passing out around town from the Humane League. I haven't looked through one yet because to be honest I'm scared it has graphic pictures and I just am very sensitive to those like most of us. I follow a few people on Twitter and Instagram who post graphic pictures and it's very hard. Sometimes I'm tempted to unfollow them, but at the same time it is the truth of what's happening, and in a way those images are what made me decide to volunteer with the Humane League.
I picked up some Maca powder yesterday. I was reading about it, and apparently it can be beneficial to people who have thyroid issues. I'm going to be putting a teaspoon into my smoothies everyday. I have noticed an improvement since I started taking ashwagandha, so I'm feeling hopeful that with a good diet and some helpful herbs I can heal my thyroid!
It's like the universe read my blog yesterday and decided to cut me a gluten free break! This isn't bread of course, but I used to love these Nature's Bakery fig newton style cookies and their chocolate brownies before I was gluten free. They make gluten free versions, but I refuse to buy them because they are DOUBLE the price of the gluten versions. Because this box is all banged up they were on a Woo Hoo sale so I got to try them! They're really good! The texture is nice and I like the tart pomegranate flavor.
For dinner last night, I made this chilaquiles casserole.It's just tortilla chips layered with homemade enchilada sauce, black beans, fire roasted corn, red onion, and a handful of vegan shreds. It's a great use for tortilla chips. I always end up with half a bag slowly dying a stale death in my pantry.
Here is a very rare moment when all five of the babies were in bed together. That seriously never happens. It's a dreary rainy day so I guess it makes everyone want to cuddle.
This is how Roxy was sleeping last night! She likes to sleep in some of the most adorable positions, it's hard not to wake her up to tell her how cute she is! But then again, she already knows it!

  1. LOVE that shade of YELLOW on that tree! Re: Humane League!!!! I have been emailing them a bit and I am going to help with some stuff, too! First - I hope to start distributing VEGAN OPTIONS HERE Stickers to restaurants! Most of the things I would like to do are online things. I know what you mean about the graphic photos - one of the reason I am going to shy away from those.

    The kitties are adorable! And so cool all 5 are sleeping on the bed at the same time! Awwwww!

    Your food photos are really calling me the last few months! NICE!

    Awesome find at a low price on those fig bars!!!!

    1. I'm glad you contacted them! I think I'll be doing the stickers sometime in the future. Today I'm going to Subway restaurant to pick up a napkin and write I'm boycotting and send it to them. They're fighting to get Subway to use chickens from a more humane farm.
      I was so excited for the fig bars. I've missed them so!

    2. You would think that if Subway could omit the ingredient found in yoga mats in their sub rolls - they could treat their chickens a little nicer, eh!? OYE!

  2. Good luck distributing the pamphlets! Your casserole looks amazing & so colorful! That is so cute seeing all of the kitties on the bed together; such sweethearts! :D

    1. The casserole was so delicious! I froze the rest so I have an easy meal when I don't have it in me to cook!
      Thanks, I'm nervous about passing out the pamphlets, but it's good to push yourself I'm learning.
      I couldn't believe it when I saw them all in bed together! I had to be super stealth to get the picture so no one moved!

  3. What a wonderful season of the year-SPRING! The yellow bush might be forsythia- haven't seen it in bloom yet here. 5 cats- wow, our one stray keeps us busy! Distributing those pamphlets will keep you busy. Do you like to meet new people? Your recipes are interesting. I hope they do help with your thyroid issue.

    1. Spring is so amazing! It really makes me feel alive and hopeful!
      My kitties definitely keep me on my toes, but I love it and would never want it any other way.
      I sometimes like to meet new people. I am an introvert so meeting new people can be overwhelming, but I am excited to meet some vegans in my area.
      I feel like some of the changes I've made are helping me with my thyroid. I am very hopeful that I can heal it naturally.

  4. I'm so so proud of you for taking the step to volunteer! I know that putting yourself out there is not easy but you are so awesome for going out of your comfort zone to do that!

    How awesome that they had the gluten free bars on sale!! Must be some good karma :) I'm glad that you are feeling better with all of the changes that you have made!

    1. I'm going to Subway today so yikes, wish me luck. I hope I don't get lost trying to find it. In Seattle they're everywhere, but not so much in SLC.
      When I saw the bars on sale I almost cried. I look at them all the time, but I just refuse to pay so much more for gluten free.
