A Day of Spuds!

I started the day yesterday with potato tacos and cucumber slices. I seasoned the potato cubes with Simply Organics fajita seasoning, and then shoved them in corn tortillas with cilantro and green dragon sauce. I must mention again that the green dragon sauce from Trader Joe's is everything. I already need to buy more because I generously drizzle it on almost everything. I think I might prefer it over sriracha which is saying a lot.
I hadn't had mashed potatoes in awhile, and yesterday it rained from the time I woke up until the time I fell asleep, so it felt right. Rain always makes me crave comfort in one way or another. I used So Delicious Culinary Coconut Milk to make the mashed potatoes. Canned or in this case boxed coconut milk makes the creamiest mashed potatoes ever. They feel and taste like you've used milk and butter (vegan of course.) I had them with some fire roasted corn from Trader Joe's, and Simply Organics vegetarian gravy which is actually vegan. It is my all time favorite gravy, and I'm so glad it exists because I am a failure when it comes to gravy making. This was a wonderful, comforting meal to have after dealing with all the rain.
I mentioned awhile ago that I review teas for Sororitea Sisters. I have learned so much about tea, and discovered so many delicious teas that I never knew existed. I got this big box of tea yesterday and it made my day!!! Even though sometimes I get a whiff of coffee and miss the good old days, I have really fallen in love with tea, and there are just so many amazing health benefits that I am super happy I made the switch. I really was a slave to coffee for far too long.

    1. I really do love it. I have learned so much about tea, and so much about the health benefits.
      To me potatoes are perfect for breakfast because they're simple to make, and they give me lots of energy for the day.

  2. Potatoes are my weakness- I did try some fries baked in the oven, very good! Did you find Subway? We go there occasionally. Roxy is very pretty.

    Sun is out right now, but still quite cool. Looks like we may get into the 60's soon, but also rain in the forecast.

      I did find a Subway. It was thankfully easier than I thought to find it.

  4. i love teas but coffee holds a special place in my heart. Did you know that tea leaves have more caffeine than coffee beans? But you brew much smaller amount of tea leaves per cup, along with less brewing time, so each cup has less caffeine than a cup of coffee. I hope that made sense. XD

    1. If caffeine weren't bad for hypothyroidism, I'm sure I would still be drinking it. Even after I quit drinking it full time, I still had it every once in awhile for a treat. But I really have grown to love tea.

  6. Oooh, I'll have to try making mashed potatoes with culinary coconut milk. That's such a great idea!! I try to drink tea in the afternoons (and coffee in the mornings), but I'm still learning to love tea (been learning to love it for years ... haha, it just always seems like flavored hot water to me. I much prefer tea iced and lightly sweetened, but that takes even more time!).

    1. The coconut milk makes them creamy and fatty enough that you don't even miss vegan butter!
      It definitely took me awhile to get used to tea. But now I have a huge appreciation for it.
      I still really miss coffee though.
      I love iced tea too, I almost always have a pitcher of it in my fridge.I like fruity teas iced more than warm.

  8. Ooooh yes!!! I want all the potatoes! So good. I really need to get back on the potato train, I always enjoy them so much when I make them. What an exciting package to receive as well!

    1. I've tried like four or five different vegan gravy mixes, and the Simply Organics is hands down the best. It doesn't taste instant at all, and it doesn't have a ton of funky ingredients.
