Myth Busting Meals

I made these delicious twice baked potatoes yesterday for breakfast out of odds and ends. I had a handful of leftover white beans, so I mashed those with the innards of the baked potatoes along with garlic, olive tapenade and some shredded spinach. I stuffed this mixture back into the potato skins, added some nooch and popped them back in the oven for about fifteen minutes. They were so tasty! I realized as I was eating them that some marinara sauce would have made them perfect, like pizza potatoes. But since I had no marinara, I topped them with some green dragon sauce. The addiction is real. I'm giving new meaning to "chasing the dragon"

There are so many misconceptions about a vegan diet, one of those being that it is expensive, and that vegans are an elite, snobby bunch. It drives me insane, and until the day I die I will be doing my best to disprove that. This meal is a great example of a super filling, healthy, inexpensive, and most important delicious vegan meal. A super simple lentil, potato and spinach curry with Jasmine rice. Since I cooked the lentils and potatoes in the morning, in the time it took to cook the rice this whole meal was ready. Any diet can be fussy and expensive, I've certainly seen some very pricey non vegan foods, and pricey grocery stores like Whole Foods sell a lot of non vegan foods. It didn't get the
nickname Whole Paycheck from vegan food only. To be honest I've had people question the cost of vegan food more than where I get my protein, and it always makes me cringe. I fear one of these days I'm going to lose it and hulk out.
Le sigh. I think I may forget how to make my bed one of these days. I just don't have the heart to make them move! Notice Joan, laying right where I do, using my pillow and everything!

  1. That kitty in the center of the picture looks like a formless ball of fluff. I can't even tell which way is up. If that was my cat, they have a belly full of my face instantly after the photo was taken.

  3. Yay! Thanks for pushing the idea that vegan diets don't have to cost an arm and a leg! Also, those potatoes look amazing. AND YES TO GREEN DRAGON SAUCE! I had some on a bagel with cream cheese yesterday, and it tasted like a jalapeno popper bagel!

    1. I swear I will fight that myth forever! And also the myth that cheap food has to be boring!
      I need to try that, a jalapeno popper bagel sounds AMAZING!!!

  4. Vegan diets definitely don't have to be expensive. I love seeing all the different food you make, so varied and tasty!
    I love your bed full of cats. How do you not just throw yourself down with them for a nap? Or would they sneak off if you tried to join in?

    1. Thank you!!! It is so hard not to dive back into bed with them, they always look so sweet and cozy! They usually stay when I climb into bed, unless I disrupt then too much and they'll leave in a huff and then glare at me like how could you!!

  5. I 100% agree that vegan food doesn't have to be expensive. The processed vegan food can be pricey but some of the cheapest staple foods are all vegan. Grains, beans, etc. It's so silly especially considering how much people pay for meat, a carton of eggs or a gallon of milk. It's crazy.

    Those potatoes look incredible! A pizza potato does sound pretty awesome too, I'd love to see you experiment with that idea! Love the kitties, as always!

  6. I know, it drives me insane. I think people look at some of the processed vegan foods, or the fancy nut cheeses and let that be an excuse for why they couldn't go vegan, and it's maddening because plenty of non vegan foods are just as, if not more expensive!
    I definitely need to revisit these twice baked potatoes with some marinara drizzled over, it would be amazing!
