All the Stuff

I love all the beautiful blooming trees. And I love how the smells almost overpower the fumes from all the cars. It's hard to be anything but happy on a sunny day surrounded by flowers.
The bus that I needed to catch yesterday was having a detour for some reason, so I just walked to my destination to catch my second bus. I walked up a street downtown that I've never been on before, and I walked by all these beautiful tulips! Daisies are my favorite flower, but tulips are definitely in my top five. I also didn't get lost which was cause for celebration. I have my safe zones here in SLC, but I still get easily lost in new areas. I don't think I will ever understand directions in this city.

I went to Trader Joe's again. And I survived. It was rainy last Saturday and a total madhouse, yesterday was sunny and not nearly as crazy. I guess Trader Joe's is the place to be when it rains!

I popped into Smith's for cat food and cilantro and green onion. I haven't had good luck with the green onions at the Trader Joe's here in SLC. I prefer to be able to pick the bunch I want, same with fresh herbs. They had the Endangered Species chocolate bars on sale for two for three! I got two lemon poppyseed which is my FAVORITE. I also was going to get the smaller squeeze jar of Just Mayo, and I noticed that the big tub was on sale for only sixty cents more. They also had Heinz sriracha ketchup on clearance. I'm going to make a spicy thousand island sometime for my beloved fries.
When I got home I made this amazing salsa fresca. It took like three minutes to make, and it is beyond delicious! It tastes like it came from a restaurant. Here is the recipe I used. I halved it and only used one can of fire roasted tomatoes. I doubt I'll ever buy salsa again.
I used the salsa on this delicious pizza I made for dinner. I started with a gluten free crust from Trader Joe's, and topped it with homemade enchilada sauce, nooch, vegan shreds, black beans, fire roasted corn and red onion. When it was done baking, I topped it with avocado, green onion, cilantro and some of the salsa. And cholula of course. This was sooooo tasty!! Maybe my favorite pizza I've ever made. And it hit the spot after all the extra walking I did yesterday.
Here's Roxy thinking she is hiding from the world, but she forgot to tuck her tail in! Silly girl!



And here's Etta helping me with my Saturday morning yoga. She likes to tickle my toes. It's nice to have someone start your day with some giggles!

  5. Those tulips are just stunning! I think peonies are my favourite flowers, but tulips are definitely up there with the greats.
