Stuff Was Eaten

I've been missing some days blogging, so I figured I'd show some stuff I've been eating and cooking. I've now made two recipes from Vegan Eats World by Terry Hope Romero and both have been smashing successes. Some of the recipes in the book are a bit too much for me, meaning they have lots of ingredients I don't have, and need cookware that I don't have, but that's okay, there are still a few simpler recipes.
Lentils and rice may not look pretty, but they're so tasty!
This is the Colombian lentils and rice and apparently it's often a side dish, but obviously it deserves to be the main attraction! It's so simple, but sooooo tasty. You just saute onion and garlic with some spices, mostly cumin, and then the rice and lentils are cooked in coconut milk and some water. I halved the recipe, as she called for two cups of dry rice and a cup of dry lentils. With one cup of rice and a half cup of lentils I made a TON, I can only imagine how much the full recipe would make. It's creamy and savory and really filling.
I had some roasted Japanese sweet potatoes drizzled with this Carolina Gold BBQ sauce from Trader Joe's. I roasted the potatoes with a little garlic powder, smoked paprika, and salt and pepper.

I can't stand beets. I love the color, but the taste is way too "earthy" for me. I don't taste the sweetness that beet fans talk about. But a couple of years ago, I read about how healthy they are for the liver, and I knew my liver needed healing, so I started juicing them. I haven't had beet juice since way before the incident, and the other day I was reading that beets can also help with mood elevation. Apparently a healthy liver helps with a healthy mood! If you're like me and don't like beets, I have found that pineapple and any kind of citrus, especially lime really makes it palatable!
This was a delicious meal. This is Singapore noodles with oven baked tofu. I had these noodles at some point while I was staying with Derek in Seattle, and I was surprised at how easy they are to make yourself, and with far less grease I might add. I like this dish because the noodles are dry, in a good way as opposed to dressed with a lot of sauce, or oil. I used this recipe, minus the chewy tofu bites. I just used my plain old oven baked tofu. This was another really easy dish and it's one of those meals where you can kind of use whatever veg you have on hand.
And here is Afro, or ahem I mean Brutus. She was spider catting up and down the couch the other day, and just being a total spazz. I had to play referee several times.
I thought she looked so funny here. She's thinking about the havoc she wreaked as Brutus. And also wondering when I'm going to stop putting that thing in her face.

  1. Spider Catting! What a great phrase! And I know exactly what you're referring to. I had a weirdo cat years ago (MoMo) who used to go under my bed, lie on his back with his paws against the box spring and "spider cat" all over the underside of tje box spring. I could hear him under there dragging himself around like a maniac and shredding the thin grey cloth covering. To this day if you look under the bed, it's just a mess of shredded fabric sagging down to the floor. But ya gotta love 'em.

    1. When I lived in PA, Afro single pawedly shredded a hole in my box spring, which then became where everyone hid when I vacuumed!

  2. I love pineapple in smoothies and juices too! I call it the kale killer, because you're right - it really does cover up some of the "earthy" flavors sooo well!

  3. I am a big beetroot fan. I actually like the earthy taste but I can imagine that it would be good with citrus or pineapple. I sometimes buy a shop bought juice that has apple in it. I love that you have managed to capture both Afro and Brutus!

    1. I wish I loved beets. They're so pretty, and roasted beets always look so delicious!
      Luckily Brutus always makes very short appearances!

  4. I love beetroot, especially in juices! You just have to remember that you had beetroot the next day, so you don't think you are dying. ;)
    I haven't cooked much from Vegan Eats World, and one of the reasons is that I am trying to use up stuff I have, not add a whole bunch of extra ingredients that I will only use a little bit of! But I really do want to cook more from it.

    1. You are so right about the day after with beet juice!
      I actually experienced that very recently, as it had been awhile!
      It has a lot of really nice looking recipes, but the only complaint I have is that some of the recipes have very long ingredient lists, and in a lot of cases some rather exotic ingredients.

  5. Spider catting! Love it. I'm going to start using that phrase. :-) The rice dish sounds awesome. I need to pull that book down off the shelf soon. Also, I love beets! But everything is better with pineapple so ...

  6. The Colombian lentils and rice, and also the Tandoori tofu are seriously amazing. The Tandoori tofu kind of blew me away! I seriously wish I loved beets, they're so pretty!

  7. That lentils and rice recipe sounds fantastic! Mujadarra is one if my favorites so i''m sure i would love the one you made.
    I frequently juice beets because they're also high in iron- i love the flavor but what will really cut it quickly is orange juice. If you can find golden beets they have a more mild flavor. Don't foget to juice their greens too!

    1. I do find the golden beets much more tolerable. Last winter I juiced beets with the little cuties oranges and it was pretty tasty. I always try to buy beets with the greens for the extra vitamins.

  8. I remember reading that citruses help also with digestion of the beet pigments. AKA you are less likely to have red poo... >.< I don't mind the earthiness, but I really don't like when people make beets super sweet. Yuck.

    I agree- most of the recipes from Vegan Eats World are too labor intensive/too many ingredients. Some random ones are super fast and easy to make... if you have the tofu or something like that premade. One of my favorites is the pad see ew... but it does use three different types of soy sauce. I find myself using all three often because 1) I make recipe so much and 2) I make other recipes that use it or I just like using them since I forget to add salt to recipes >.<
