Utah or Bust!

My last meal in Seattle!
I'm down to my last few hours in Seattle. There are no feels left because I have them all. Above is my last meal at Chiang's. It is Schezwan tofu, and an eggplant dish that I forgot the name of. The eggplant dish is my favorite dish of all time. Many tears have been shed in my kitchen trying to recreate this masterpiece. It's spicy, and the eggplant is cooked perfectly. I've tried ordering this dish at other restaurants, and it never comes close to Chiang's version. And the tofu is silken, which I don't always care for, but when prepared correctly, I guess I love it!! The restaurant hasn't changed one bit in all of these years. If you ever find yourself in Seattle, I cannot recommend Chiang's enough.
Yesterday was a frenzy of activity. I had to run around and get little things like litter boxes, cat food, a phone charger, stuff like that. It was so nice to be back in the cat food aisle. I have avoided that aisle like the plague since this happened. It was kind of nice, because we were kind of driving around all day, so I got to see lots of the city. So many memories. I found myself in this city. I feel like I wouldn't be who I am if I hadn't moved here. Some of my best and worst memories involve Seattle.
Today, all that is left to do is go pick up the mini van, pick up the kitties, and hit the road! We will be on the road by ten AM!! It's a twelve hour drive, so I figure we'll roll into Utah around eleven or twelve? Not sure, but this time tomorrow I will be in Salt Lake City! It's so scary and wild to imagine.
Before I sign off, I just want to say Thank You so much for the support and love. I genuinely wouldn't be making this move without it. I was broken, and in so much pain that I didn't want to live when this all first happened. I couldn't live with the pain and guilt. And I couldn't handle being so alone in the world. I feel so grateful and overwhelmed by all the love and support, both financial and emotional.
Here's to sudden changes for the greater good, and happy times and blog posts ahead! I can't wait to take pictures of my new pkace and show you guys!

  3. I was curious what you last meal would be. I have visited Seattle several times, but have never even heard of Chiangs! I will be sure to add it to my map for my next visit.

  6. Hi there! I was offline for about a week and a half and reading and commenting on these backwards! Sorry! But it sounds like there are some positive things happening! Can't wait to read more!
