Oodles of Noodles!




I wanted to try and make Pad Thai, but I don't have tamarind paste. I've seen it at Sprouts, and it's pretty pricey. So, I got some tamarind pods and made my own! It was a bit of a pain cleaning the pods, and then removing the sticky tamarind from the seeds. I now see why the paste is so expensive!
Here is the finished product. I used this recipe. Definitely one of the better Pad Thai recipes I've tried!
Last night I was craving cold sesame noodles, but was out of tahini, so I made cold peanut noodles with baked tofu and some shredded romaine. It was pretty tasty, but I think I prefer sesame noodles. I like my peanut sauce with rice!
I saw these pretties on my walk today. I see a lot of this flower, but usually it's purple and white. I'm so grateful for nature doing it's thing. It's really the one thing we can count on right now!

  4. Peanut sauce is so good with rice! I love peanut noodles, too, but having peanut sauce on rice was like a revelation.
