Homeward Bound

I wanted to start this post off with a picture of a delicious meal I made last night. Cashew Alfredo with roasted cherry tomatoes and roasted garlic. With a little dab of pesto for extra credit. It's one of the few vegan meals I can make that D will eat. He has the palate of an extremely picky toddler. I made this delicious vegan meal because I am celebrating signing a new lease. I've been working on a plan for about a week, and it's finally coming together.
I am moving to Salt Lake City Utah. I found a two bedroom apartment for less than half of what I would pay for an aPODment in Seattle. Seriously, they are renting "studios" that are 150 square feet for one thousand and over in this city. It's getting nuts. I don't feel like I can live a comfortable life here. So, Salt Lake City or bust. I will share so many more details once I'm settled, as anyone can probably imagine, my emotions are all over the place. I feel like I have been through a battle. My kitties an I are going to be reunited, and it's going to feel SO GOOD! I am moving next week, we're figuring out the exact day today. D is renting a van, and driving us there. I feel good about this. To be honest, I feel like although I am scared shitless, I feel I am doing the right thing for a plethora of reasons. I secured an apartment in the span of two days. The one I'm moving into was my second choice, not bad. I don't need a second bedroom, but I am a nerd and was thinking that the second room can be my blogging room/kitty play room!
I would never have been able to survive all of this without all the support, both on my GoFundMe page, and just all the emotional support. I really mean it. D can be a really difficult person to deal with, and he in some ways has put more stress on me than my whole situation, so thank you. I will never be able to express how much it means. It kept me going, and fighting. You guys saved me when I most needed it. Forgive me, I am secretly a huge cheesey, romantic comedy gal, and I feel like I'm about to start quoting some lines.
I went to a used computer store yesterday to buy a used laptop since the one I have been using isn't mine, and there was a PCC market across the street. PCC is a Co-Op that everyone can shop at. They have lots of bulk goodies, everything is organic, and they are a vegan MECCA! D told me to pick out a few things since I may not see these items again for a long time.
I love Tofurky!!!
Please forgive the pictures. My beloved camera got lost in the "move" and I'm back to my crappy cell phone pictures for now. PCC had several vegan cheeses I had never in my life heard of! I got some crackers, and today I'm going to have some fancy cheese and crackers!
Hopefully by this time next week, I will be settled into my new place, and back to blogging and being as happy as any of us can be in this crazy life.

  6. Good luck with the move! Salt Lake City, from what I understand, is very different from Erie and Seattle, so I hope you enjoy it! I have spent a summer in Southern Utah, which is pretty but I know you wouldn't like it there. I am glad you found a solution!
