I took this picture the other night after dinner. I really need to learn how to use the zoom! Anyway, there is one view of the mountains. I've taken so many pictures, but none really capture the beauty of being surrounded by these mountains. But practice makes perfect, and one day you will see a stunning picture of these mountains on this blog!
By the time I got home, I was starving and wanted to eat like NOW, so I went super simple and heated up some refried beans and toasted some crunchy shells. I know crunchy shells are not authentic, but sometimes I crave that crunch! I topped these with shredded lettuce, cilantro, green onion, avocado and of course tapatio! This was a super cheap, and super easy dinner that tasted really fresh and delicious. I made this in less time than a frozen meal, or even ordering delivery. For the past month, my eating habits had gotten really terrible. I went over a week with barely eating anything, and then flip flopped between not eating, or eating total crap food. So, feeding my body simply has made a big difference in how I feel.
For dessert I had another chocolate covered cocomel bar. These things are life changing!

This was the vanilla flavor, and I loved it so much. I think I mentioned this once before, but one time I was missing caramel so much, and so I decided to make vegan caramel, and it was not a pretty sight. Never will I ever attempt that again, so I'm so happy these exist!

Hooray! Brilliant news about the job. well done. I know it's not your ideal job but it sounds like a great place to start and that's cool that it is so near your apartment. Hope you have a lovely weekend x

ReplyDeleteWhen I was growing up, here in Australia, hard shell tacos were the only tacos! It took me awhile to adjust to the idea of a soft shell taco. LOL I still occasionally have the hard shell variety for nostalgia, and because they are fun, but my goodness are they messy!
When I was a kid, that's all we ate too. I love the crunch, but you're right, they are so messy! They crumble when you take the first bite, and sometimes they're even hard to fill without breaking!

DeleteOh that stinks about how mormon SLC is. I know Southern Utah was super mormon, but kept hearing that it was more diverse in the North. But I guess it is still majority Mormon.
ReplyDeleteBut the view is awesome. I loved that about Southern Utah (much hotter than SLC) you could see the mountains miles away, from almost any point.
I think that it is way more diverse, especially the downtown area which I live near. (woot woot) But the super Mormon influence still ways heavy in the air. I feel nervous that I'm going to cuss in public and be reprimanded or something!
DeleteI cannot even believe that it's possible to be hotter than SLC! I don't know how you did it, I don't know how I'm doing it! But man, the views kind of make up for it. It's so beautiful.
I don't think the temp difference too big during the summer? I know Southern Utah (google Moab, Cedar Breaks, Saint George Utah for photos) is much more of a desert. It looks more like the Grand Canyon with red rocks. So in the winter it is more in the 50s-60s depending on your elevation (Cedar Breaks actually snows a lot) I didn't mind the heat as much since it was so dry. Here in New Jersey it is so humid that you can't sweat to keep cool (no evaporation) I am not a hot weather girl, my husband and I keep joking we should live in Iceland. XD
