Expansion

                            
This video popped up on my YouTube page yesterday, and decided to give it a watch. I am so happy that I did! He is the sweetest, and the cutest. He's going to stay vegan, you can tell. He made the connection. I strongly feel that when you really connect everything, you are vegan for LIFE! The best life sentence in the world! And while I know very little about the power lifting, body building community, I do know that they are serious about their protein, and they promote lots of protein powders, and of course tons and more tons of meat. Please watch the video, and thumbs up, and subscribe to his channel. I feel this deep need to show this guy support. Especially because before long, the vegan YouTube police will start nitpicking his diet and body, so I just want to welcome him to the community so he knows that there are kind vegans out there. This is so freaking exciting! This guy is freaking huge, and that's great! One of the myths of veganism is that we're all a bunch of skinny weaklings. We all know that isn't true, but as they say, a picture is worth a thousand words. He put out a new video this morning of his vegan power breakfast. He is so delightfully confident in vegan food that I know it will be contagious for veg curious people! He made the biggest bowl of oatmeal ever! I know he'll be talking about his new diet at the gym, and it's that time of year when people want to make changes, and become better people. And it's so nice to see someone focusing on the ethical side of veganism, not so much the being lean and looking amazing part.
I caught Chunk in the act of driving Animal crazy, and I was lucky enough to get a picture. Animal likes to sleep in that bag, and it drives Chunk insane. So, he chewed the corner of the bag so he can taunt her. I noticed later on yesterday, he has a little nick on the top of  his head. I don't need to call Ace Ventura to solve this mystery.
For dinner last night, I started making breakfast hash from The China Study Cookbook, here's the recipe and I wanted refried beans too, so I decided to make kind of a hash casserole. After the hash was done, I layered one can of refried beans on the bottom of my dish, then I sprinkled green onions and nutritional yeast, then the potatoes, and finally a tiny sprinkle of cheddar daiya. I baked just long enough to melt the cheese and heat up the beans, and while that was happening I made cashew sour cream for the first time ever! I just blended about half a cup of soaked cashews with some salt, and the juice of half a lemon. It was really tasty!
It would never in a million years win any kind of beauty contest, but man was it good! I had two tostada shells hanging around so I heated those and used them for dipping. his was delicious, and savory and satisfying, and felt like total junk/comfort food, but it is actually pretty healthy.  It felt good to be in the kitchen, and have a little bit of a creative streak happen. It's been awhile, I've been in a bit of a rut. Maybe all this meditation and positive affirming is dusting the cobwebs off of that part of my brain!
