Greens, Veggies and Grain Salad

Yesterday I made a delicious grains and greens salad with some brown Jasmine rice I found at a great price. For some reason the picture downloaded upside down, and I almost scrapped sharing, but I actually wrote down the recipe as I made it (which I rarely do) so I'm going to share it anyway because it's really delicious!!
                                                        
                                                        Greens, Grain, and Veggies Salad
  • 1 C. dry brown rice
  • 6 mini sweet peppers diced
  • 1/4 cup chopped cilantro
  • 1/2 C. chopped parsley
  • 1/2 small red onion diced
  • 7 green olives, sliced
  • 1 Cup Lacinato kale, shredded
Dressing- 1 tsp. Apple Cider Vinegar, Juice of 1 Large Lemon, 1 large clove garlic, minced, 1 Tablespoon Extra Virgin Olive Oil, and Salt and Pepper to taste.

While your rice is cooking, make your dressing first so that the lemon and garlic can really come together and flavor the oil. Chop all your veggies and place in a large bowl. Shred your kale and if you want to leave it raw add it to the veggies, or add it to the rice during the last ten minutes of cooking, which is what I did. Let the rice cool for ten minutes or so, then add to the bowl with your veggies and herbs and stir in the dressing. Add salt and pepper to taste, and you have a delicious lemony, garlic-y salad with lots of flavor and crunchy textures!! Kalamata olives would probably be amazing in this too!
I had some of this for dinner with lemony garlic potatoes from Veganomicon and it was a really tasty meal. Very garlic-y and lemony which are two of my favorite flavors. I would show you my dinner picture but it's super upside down and is headache inducing! Wish me luck figuring out this upside down issue!
