Salad, Miso and Cats

I had some dried chickpeas soaking that I needed to cook yesterday. I had planned on making hummus, but I decided to make chickpea salad instead. I haven't made much chickpea salad since going gluten free because I don't have a suitable gluten free bread that I love. Man I miss sandwiches! Anyway, I whipped up a curried chickpea salad and man was it tasty. I served it with a green salad and cucumbers topped with more of my homemade goddess dressing. I'm happy to say that originally my goddess dressing was a little thin, but it thickened up overnight in the fridge. This was a really tasty breakfast. I feel like having salad for breakfast sets the tone for a nice healthy day.
When I got home my stomach was a little upset, so I made a garlic-y ginger-y miso broth with some rice noodles and baked tofu. I felt instantly better. This is the second time I've felt a little queasy and miso has saved the day. It instantly calms my stomach.
Everyone needs someone to hold their hand every now and again. I just can't stand the cuteness with these two sometimes! With all that's going on in the world, I am so, so grateful for these beings who make me smile everyday.

    That soup looks so incredible! The broth looks so vibrant. Have you tried the ginger miso broth from Trader Joe's? I really want to try it but I'm not a huge fan of ginger and I'm afraid it'll be too gingery. If you've tried it, what do you think? The chickpea salad bowl looks fresh and delicious!

    1. I haven't tried that broth. I've actually never had store bought miso broth. I just buy the paste and make my own because then I can flavor it like I like. Plus, I've read that boiling miso strips away a lot of the nutroents and probiotic benefits so I just feel like it's safer to make my own.
      The chickpea salad was so good! I still miss having it on sandwiches, but it was still delicious!

  2. I'll bet the ginger helped in settling your stomach as well.

    When I was little, my mother used to give us ginger ale when we had an upset stomach. So the soup was a double-dose of goodness!

    1. My mom too! The last time I had miso for an upset tummy, someone on Instagram suggested ginger and so I figured why not add it to the miso broth for extra goodness!

  3. I rarely cook chickpeas from scratch, the times I have tried I find they still seem to be a bit woody and make my tummy bloat up. Do you have any tips?

    1. Pre-soak them in water with at least a tablespoon of baking soda.

    3. I think the secret to making dried chickpeas perfect is soaking them for two days. I totally know what you mean, I always have troubles when I soak them for the suggested eight hours. But when I soak them for two days, they cook up really quickly and perfect every time.
      I have also heard that baking soda helps like Blake said, but I've never tried it myself.

  4. I have been NEEDING Miso FOREVER!!!! I don't know why I haven't bought more in the last several months! Once I ran out of my SeaClear I needed it and keep forgetting! I go to do a recipe and don't have any! OYE!! Miso is REALLY expensive here tho! The cheapest I have seen over the last several months was $8 for the smallest container.

    1. That;s too much! I think I pay around four dollars a tub. Too bad you don't have any Asian markets around, they are the cheapest.
