Just Jackfruit


Well, I went to Target yesterday and look at that! Three of the four varieties of Just Mayo were all sold out! All of the gross non vegan mayo was stocked to the max. Looks like lots of super bowl dips are going to be made using what is in my opinion the best mayo ever! I feel like when a non vegan tries something vegan and loves it, they become instantly more open to other vegan foods. Woot Woot!

I wanted to post the BBQ recipe, but I don't feel like I perfected it yet. This was pretty good, and it made a great sandwich, but it needs more or less of something. I must tinker with the recipe more. Poor me, having to eat more BBQ sauce!
After simmering and shredding it looked something like this. Pretty crazy right? I can tell you how I got it to this point. I rinsed off the jackfruit pieces, and added them to my BBQ sauce, plus one cup of water and let simmer for forty five minutes. After that it was super easy to break apart with a fork and wooden spoon.

I made a slaw with cabbage and kale, and  piled that on top. It was amazing. The jackfruit is a unique texture. It's not quite soft, but after simmering it isn't crunchy either. I feel like it would be excellent for a vegan crab cake. It really soaked up the BBQ sauce flavor. Jackfruit is very low calorie. The whole can of fruit is like one hundred and fifty calories or something like that. I'm super glad I got three cans of this, I really love it. If you can find it in cans it is so much cheaper than Upton's jackfruit.
I mentioned yesterday that I would try the sweet lime this morning for my lemon water. As you can see, it looks just like a lemon, except it's like a lime in that there are no seeds. It has absolutely no flavor. I squeezed half of the lemon(lime) into my water like I do ever morning, and when I tasted my water, I swear it tasted like plain old water. I had to make sure I added the lemon juice. It's the strangest thing. I did a little googling and it seems that that is one of the qualities of this fruit, no flavor. Someone said it was suggested to eat it like an orange, and they said it still didn't taste like anything. Weird right?

  1. That is odd, does your Target sells the Just Mayo in the non-refrigerated section? it was always sold in the refrigerator back in Virginia. I sure do miss it. Glad you are enjoying the jackfruit. My experience with it wasnt as positive, but I am not a good cook, so that could be part of it.

    1. Yes. Every store I've seen it in has it on a shelf, warm. But Veganaise is always refrigerated.Not sure why. In Erie, the co op had it in the refrigerator now that I think about it.
      I did have luck with can number one, I still have two more cans to ruin!!

  2. I love pulled jackfruit. We use the Blissful Basil recipe that you finish off in a tray in the oven after you've pulled it apart. I must hunt down another can soon!

    1. I want to play around with the next can and try making it without a sauce, or at least less saucy. I'll have to check out that recipe.

    1. It took me so long to find the unripe jackfruit. I noticed a lot of places had the ripe fruit in syrup, but not unripe in brine. If you can't find any, I'll send you a can!!
