Saturday Vegan Eats

I thought I'd do a What I Ate post today because yesterday was a pretty delicious day. And a pretty great day too.
I took a break from my usual morning kitchari and made cottage fries seasoned with onion salt, garlic powder and nutritional yeast. I dipped them in a ketchup green dragon sauce combo which I highly recommend. Very delicious way to start the day.
I had this hideous but delicious smoothie with banana, blueberries, strawberries, maca powder, hemp seeds, spinach, and a little peanut butter. So ugly but so delicious!
I also enjoyed this lavender melon kombucha. I'm so happy Natural Grocers had these on sale!! This is such a nice flavor combination, especially for a nice chill afternoon.
For dinner I made one of my favorite meals. Cauliflower wings with Trader Joe's gyoza dipping sauce. I added a little crushed red pepper and Sambal Olek to the sauce for an extra kick. I also used coconut flour for the batter, and they turned out great. Cucumber slices on the side. I love that a ton of stores have been having excellent sales on English cucumbers which are my favorite!
I also had a lemon bar for dessert, but didn't take a picture. It was tart and juicy and delicious!

I mean can you even stand it? Look at that super adorable, extra floofy belly just waiting to be kissed and rubbed!

  3. OMG fluffy belly! That is so cute! Your meals look delicious! I don't know why it never occurs to me to have savory dinner type meals for breakfast. I've always wanted to try out the miso soup for breakfast thing... maybe I will soon! The smoothie sounds so yummy and refreshing. I love how much you are embracing the cauliflower lately :)

    1. I've always been a savory breakfast type of person, I don't now why. Miso soup is a really great way to start the day. I swear it gives me a zip of energy too.
I'm doing another cauliflower experiment tonight so we'll see how it all works out! Yikes!

    1. I know, she doesn't understand how irresistible her belly is!
I am enough of a convert to say I am looking into other cauliflower recipes to try. I think when It's mixed and blended with other things I can eat it. I'm going to try mashing some cauliflower into mashed potatoes sometime and see if I like it. It's pretty exciting because cauliflower and I have been sworn enemies my whole life!
