Struggles!

I like to think I'm a pretty good cook. I am no chef, but I have come up with some pretty tasty dishes all on my own. There are certain things I struggle with, to the point that I've almost given up. Some examples are quinoa, no matter what method I try it's never light and fluffy. Like never. And quinoa is expensive, even in bulk so it's just not in my budget. Another example is sushi. I am the worlds worst wrapper/roller. I hear practice makes perfect, but I have tried soooo many times, and I show no signs of improvement! Another food I struggle with is vegan burgers. I make burgers that taste amazing, but they fall apart, or the texture is just off. Or I make burgers that have perfect texture, but are bland and boring. I feel like I have tried every recipe out there, every bean, every grain, tofu, seitan, tempeh, combos of all of the above and so on. Out of the five million attempts I've made, maybe two or three times I have actually had success and it's always such a beautiful, rare occurrence, like a rainbow when it's raining! One attempt that really worked I actually blogged about, which is good because I wrote down the recipe! Some type of vegan burger is almost always in my freezer, even when I'm trying to eat nothing processed, I will bend for a vegan burger.
Every now and again I throw caution to the wind and attempt another vegan burger. Yesterday was one of those days. I had two potatoes that needed to be used and a can of garbanzo beans begging to be used. I steamed and mashed the potatoes, and mashed the garbanzo beans to about the texture you would use for chickpea no tuna salad. I mixed them together with some spices, and salt and pepper and let chill in the fridge for a few hours. One thing I have learned about making perfect vegan burgers is no matter what ingredients you use, they all improve after a good chill. It makes everything stick together so much better!
These were just okay.
I cooked them in a pan on the stove top first, then finished in the oven. They tasted pretty good, I used red curry powder as one of my spices, but they didn't hold together. They were like a mashed potato patty. Maybe I should have only used one potato. At any rate, I didn't bother putting a patty on an English muffin as planned, because it just wasn't anything like a burger. But luckily taste-wise it was pretty dang tasty. In the end, I'm okay with kitchen fails as long as it's still edible!

A Man With a Pizza Grabs a Seltzer..


This video is a lot of what I love and admire about Cenk Uygur. I love when he rips into the typical man. I'm talking about the men who are so neanderthal by nature, there's pretty much no hope. I love it when he just breaks it down, and shows how weak and small minded those types of men are. I guess I love it so because I have known so many of those types of men. Shudder. Men who are true feminists are just the greatest!
I had some leftover green chili sauce from my post break-up burritos, so I made a green chili pizza last night! I used Trader Joe's pizza dough, and topped it with the green chili sauce, some trader Joe's vegan shreds, white beans, and green onions. I don't know if I've ever had pizza with green chili sauce before, but I loved it!

Trader Joe's pizza dough is such a great deal! It's like a dollar give or take, and it really makes a nice pizza. Pizza dough is easy to make, but with all of the rising and resting time, it can be time consuming. This dough just has to rest for twenty minutes, and it's ready to be baked!

I don't have a round pizza pan, and it just seems like an unnecessary expense, since a square pizza tastes the same! Plus, it's much easier for baking/rolling/shaping challenged people like myself to form a square or rectangle than a circle!
I also wanted to mention this seltzer. I used to drink La Croix way back in the day, like late nineties, early two thousands. Back in those dark days the flavors were plain, and lemon. Maybe there was a lime, I can't remember. I always preferred lemon. No one really drank it back then, and in the town I lived in you could only find it at one store. I see tons of people buying La Croix now, and it has a gazillion flavors. I've tried a few of the newer flavors, and I thought passion fruit was my favorite, but now that I've tried coconut, passion fruit has to have a seat. This isn't coconut water, it's seltzer with coconut flavor. It has a light coconut taste, not too strong, and coconut goes really well with fizz! I like to have some kind of carbonated water in my fridge for those times when I just am so bored with flat water. Fizzy water helped me get over my beer habit. I found myself drinking more soda at first to help with the carbonation cravings, and I realized soda isn't any better for me than beer, so I started relying on seltzer water. Anyway, if you see this flavor of La Croix, try it, you won't be disappointed!

I Love Post Mofo!

I meant to talk about this earlier, but things have just been so crazy, I just am a little behind! If you are like me, and feeling a little post Mofo blues, the lovely Jennifer at My Blissful Journey has started a little post Mofo group, here is her post about it. I and many others are on board. i want to keep this positive community going!
I kind of split my "Pick 3" into two groups, I hope that's okay. First, I picked two vegan products I have recently tried and enjoyed. One of the two products inspired me to try to recreate it, which is my new vegan recipe. It turned out amazing for my first attempt, and I actually remembered to write down the recipe! My first vegan product is Trader Joe's Vegan Shreds. While they are no Chao, and Dylan reminded me they are certainly no daiya, what they are is a great vegan mozzarella replacement, and they are two plus dollars cheaper than any vegan cheese I've seen. They are like daiya in that I will not be eating these cold, but in vegan mac and cheese, pasta, burritos, etc. they make for a delicious cheese-like experience.
The second "product" is this amazing chickpea salad I had tried a few weeks ago. It BLEW MY MIND. It's called Balela Bean Salad. I found it right around the other prepared salads. Even though $2.99 isn't a lot for a prepared salad this delicious, I knew I needed this in my life all the time, and I could make it cheaper! I made it last night, and while it isn't exact, I think it's pretty close. It's so fresh tasting.
                              Imitation is the sincerest form of flattery Balela salad!
  • 1 can garbanzo beans, rinsed
  • 1/4 to 1/2 C. rinsed black beans
  • 1/4 C. chopped parsley
  • S&P to taste
  • 1/2 Medium onion, diced
  • 2 T. Extra virgin olive oil
  • 2 T. plus 1 tsp. Red Wine Vinegar
Mix oil and vinegar with a pinch of salt and pepper. Put all other ingredients in a bowl and mix well. Add in oil and vinegar mixture a tablespoon at a time until dressed as you like. I ended up adding about one or two more tablespoons of chopped parsley and a few extra splashes of vinegar. Let chill for at least an hour. Can be served cold or at room temperature. I loved it so much, served with some roasted potatoes that I roasted in the leftover oil and vinegar mixture,  a flat bread, and some lettuce with a balsamic dressing.

I will probably be posting lots of similar recipes as I play around with this. It's one of those salads that only gets better, and since it's great cold or room temperature, it's perfect for packed lunches.

Random

The weather yesterday was so picture perfect. It was totally blue skies and sunny, and almost seventy degrees! I took a long walk yesterday to clear my head, and also enjoy the sun while it lasts! I know we are getting closer and closer to rainy season, and I'm kind of dreading it. I'll take rain over snow and below zero temperatures any day, but I am no fan of grey and rain! I love being out and about on sunny warm Sundays. You see all kinds of people on walks or jogs, or taking long bike rides, just soaking up the sun. It reminds me of when I first quit smoking cigarettes. I remember I was out walking somewhere on an early Sunday morning, and I noticed all this activity around me. All kinds of people doing healthy and happy things, and I felt so happy that I was one of the healthy happy people! Between the nice weather and the great news about taco bell going veg friendly, I just had to make a burrito bowl. I used ingredients that were going to be turned into veggie burgers. (brown rice and black beans) I am finding myself resisting my menu plan. I will still use the ingredients I have, I will just turn it into something different from what I wrote down. I am the worst that way. For years I have heard people say they meal plan, and make a  list based on the meal plan, and save so much money. It always seems like such a smart thing to do. But every single time I try, I just can't follow through. Something that sounds good one day, all of a sudden doesn't sound good the next! Am I alone in this crazy thinking? I feel like as long as I stick to having certain inexpensive staples, I can make whatever I feel like based on what I have, and not have to be super plan-y about it. Another thing I can't do is batch cook, or meal prep. I might have rice three times in one week, but if that rice is already cooked, I'm going to feel pressured to eat the rice, and I'm going to want anything other than rice. I've watched YouTube videos where people cook up all types of things and put them in cute little containers, and stack them all prettily in the fridge. It seems so logical and organized to do the same, but I just really can't.
Wow, I got really off topic! Sorry, back to my burrito bowl, or the veggie burger that never was!
This bowl had brown rice, a potato and black bean "hash", sliced avocado, lettuce, red and green onion, and a vegan queso made from the last dredges of a jar of salsa, and about one fourth of a cup of soaked cashews. So so good. Another dish with lots of textures, flavors and temperatures. It feels so good to be eating food again!
I also was trying to re-organize my cupboards, (ha ha ha) and I discovered a boxed cake mix which I think I either found on sale somewhere, or might have gotten at Vegan Haven, and I decided to experiment using a can of carbonated water instead of oil, vegan butter, vegan egg, etc. I've heard of cola cakes before, but I've never tried it. I happened to have La Croix seltzer water in coconut flavor(soooooooo good!) so that;s what I used. Here is the article I read for ideas.
I mixed the contents of the cake mix with one 12 oz. can of seltzer, and I baked the cake as directed on the box. It totally worked! The cake is just as moist and fluffy and cake like as if it were loaded down with oil or earth balance! And if you use seltzer instead of soda, you aren't adding extra sugar. This  is a great shortcut for any cake emergencies that life might throw your way!

Haul, Dinner, News!

One of the things I appreciate most about Seattle is it's kick ass bus system. When I lived here before, I don't think I appreciated it, but after living in Erie and dealing with the worst public transportation EVER, I am chock full of gratitude this time around!  I went to Trader Joe's via the bus yesterday for the first time from my apartment, and it was so pain free I can hardly believe it! They've improved the bus system since I last lived here, and wow does it show. I'm so happy it isn't a nightmare to visit my boyfriend!
Vegan Gummies!!!!!!
This was my one and only impulse buy. I am on a super tight budget until things look up for me, so sticking to my list is a MUST! But these were pretty inexpensive, and vegan gummies are very hard to find. They are cute, they're in little T and J  shapes, and the flavors are lemon, grapefruit, tangerine, and lime. Each gummy tastes like real fruit, not manufactured. They are sour, but not the obnoxious, bring tears to your eyes sour. I would say maybe they are more tart than sour. But either way, I love these, and they deserve the attention of their own picture!
I have said it before, but I really appreciate that Trader Joe's doesn't hike up the price of organics the way some stores do. And, they have their own sriracha! And it's delicious! Woot!
Have you tried their vanilla and cinnamon black tea? It is a seasonal tea, and it is AMAZING! I had to try a cup as soon as I got home, and it is everything good about the holidays and winter in a cup! This is coming from someone who loathes winter, and dreams of living in a tropical paradise! It is totally balanced with vanilla and cinnamon, you can taste them both. My new fave!

I got a few other things I forgot to take pictures of too. Like some pears, English muffins, onions, and rice. This haul was under fifty dollars, and will easily last me a little over a week. And that includes all meals and beverages. I love Trader Joe's soooo much!
For dinner last night I decided to have some tofu and rice lettuce wraps with a hoisin dipping sauce. So easy and delicious!
I am a big fan of wrapping and dipping my dinner. Silverware is so overrated!
I have some good news, and it is somewhat related to a recent Mofo prompt. Taco Bell is going super vegan friendly! On my recent road trip moving from Pennsylvania to Seattle, I saw a million taco bells. Taco bells are everywhere! And we all know fast food is bad, whatever. Sometimes people have cravings, maybe taco bell was a favorite growing up, or sometimes we are on road trips, sometimes we might be out with friends, there are a million different reasons why this is wonderful news. Taco bell is also inexpensive , so this is great news for people on a budget. This is great for the movement, helping to push us more into the mainstream. Maybe someone who would never in a million years try vegan food, will be brave enough to try it if it's at taco bell, because you know they aren't going to slip any weird superfoods into your meal! Ha. Also, it's one more way to show that vegan food is not expensive(or doesn't have to be) or hard to find. This could also be good news for vegans or vegetarians, or aspiring veg heads who happen to live in food deserts. All in all I find this to be AMAZING news! We are not going away! We need to support taco bell's offerings to show they made a wise choice, and you know it will only be a matter of time before other chain places wake up!!

First Post Break-Up Meal!

This was a very rough week for me. It was hard to finish out Mofo not just because of how I felt, but because I just pretty much didn't eat for about five days. A few times I tried to eat, but it just wasn't happening. Yesterday I told myself I needed to get a grip. I try to set a limit on how long I allow myself to "lose it". I once knew a woman who was a hoarder.  Her house was truly like a house of horrors. It smelled, there was stuff and trash everywhere, you really couldn't tell a difference. It was normal for her, she would invite people over and everything! I once asked her how it had happened, and she said one day she became depressed, and now all these years later here she is. It was very sad. I have never forgotten those simple words of one day I let things go, and now here I am. Ever since then, when faced with a major hurt, I let myself have a little time, but then it's back to normal, as much as it can be. So yesterday I pulled myself together, cleaned my place, cleaned myself, and faced the world. And I didn't die, or end up losing it on the bus! Isn't it funny how sometimes that's how it feels? Like the mundane tasks of life might actually kill you?
I made some pretty awesome green chili burritos for my first meal post break-up. It was soothing comfort food, and it hit the spot!
I also made a cashew/hemp seed sour cream that I drizzled over the top. I filled the burritos with some jasmine rice, Cannellini beans, and nutritional yeast. It was nice doing something nice for myself, and I feel much better. One thing I've learned in life is sometimes no one can love you or take care of you like YOU! When I am feeling down, or blue I always feel better after I clean. It's like I washed the stink of depression away. That's how I felt yesterday, like I washed the stank away.
Something else I did last night before I went to bed was clean up my YouTube subscriptions. I was subscribed to a lot of the Raw til four, very health conscience channels, and I find they no longer serve me, and some of them actually make me feel negative emotions when I watch. I know that everyone promotes veganism differently, and I think that is great. We have a lot of people to reach, and everyone is different. But I am not their audience. It feels so great to have freed that space in my head. I don't want vegans to become so divided that nothing gets done. We don't want to be like the government. I want to save animals, not bicker with and get upset over the vegan, body and food police.
Hopefully this coming week will be a good one, and someone will hire me without a Mc or burger in front of their name! I'm going to Trader Joe's for a few cheap groceries, so I will have a haul tomorrow. I'm trying something new, I am writing somewhat of a menu plan, and making my list based on that. I've heard too many people say this really helps save money. I'll try anything once, and saving money is kind of important right now, but it's sooo tedious to plan so much. Anyway, we'll see if it was worth it!

What Matters is the Animals.

I watched a video on YouTube yesterday that really upset me, even twenty four hours after watching, I am still upset. It was a vegan YouTuber who I have been following for awhile. I don't agree with all of her viewpoints, but overall I have enjoyed her videos. She did a video last week about why are there so many fat yogis, (she is a yoga instructor in addition to a vegan YouTuber) and I was a little offended by it, and didn't watch the whole video. It doesn't sit well with me to hear someone who is a yogi and a vegan be so snarky. I chalked that up to a difference of opinion, this woman is a very health obsessed vegan, no oil, no salt on and on, so I figured just let that slide. I decided to watch a video of hers yesterday, and she was speaking of taking her kids to a new pediatrician, and this doctor was everything she could have wanted, she believed in homeopathy, seemed to be into yoga type things, on and on. However, the doctor was overweight. In the beginning of her video, she asked her kids what they thought of this doctor, and her nine year old daughter looked right into the camera and said"why should we listen to fat people"? The rest of the video was a long, mean spirited rant about an overweight woman giving health advice. It would have been okay, except she called this woman fat and obese numerous times, making all kinds of jokes and such. This person also feels that all vegans need to be very trim in order to properly represent the vegan lifestyle. I felt nauseated after watching this. Especially seeing a child call someone fat, and it seems that the mother encourages that behavior. I think it's fine if you want to be slim, and yo think that is the best example of a vegan lifestyle. But I am so tired of the food and body shaming within the vegan community! When I meet someone who is vegan, the last thing on my mind is their appearance. I am always happy to meet another person who is kind and compassionate, and that beauty shines through. How are we going to change the world for the animals by tearing people down? Tear someone down who is doing horrible things. I worked at a bar in Erie, and I will never forget mentioning to one of the customers that I was a vegan, and he looked right in my eyes and said" I'm surprised to hear that because you aren't thin like other vegans I've met" It was like a punch in the face. As a matter of fact, I wold have preferred a punch in the face. Physical pain heals, words stay with you forever. I started questioning myself. Am I a bad spokesperson for veganism  because I am not as thin as whatever the perfect ideal is? Do the animals care how thin any of us are?
I hope that some of this body shaming and food judgment goes away. I don't care what you eat, or what you look like. If you are vegetarian, or vegan, I am so thrilled, and as far as I'm concerned, that's all that matters. Vegans come in all shapes and sizes, and as far as I'm concerned that's a good thing. I'm not saying I want people to be morbidly obese, because vegan or not we all know that isn't healthy. But I don't want everyone to look the same, and thin does not mean healthy. I worked with two girls in Erie that were both thinner than me, but they both drank and smoked, and ate the crappiest of all crap for food. I was a million times healthier than them, and in mch better shape physically.
I also fear what these type of videos and messages send to people who might be dealing with an eating disorder, or any self esteem issues. Back in the day when I was dealing with my eating disorder, a video like this would have been very triggering. I read some of the comments on this video, and happily most people were as outraged as me, bt there were several people who were saying that they keep in the closet about being vegan, because they don't feel like they look good enough, and they are scared of making veganism look bad!!! We are a minority, we need people standing tall and proud, not hiding in the shadows because they don't look like an athlete or supermodel. I think some of these YouTubers, especially the more popular ones need to also think of their audience. A lot of teens and yonger watch YouTube, and really look up to these people. Maybe they are getting teased in school, only to come home and find that they aren't thin enough to be vegan.  These weight obsessed YouTubers like to justify this meanness by saying they care about people's health, and they want people to be healthy. I don't agree. Calling people fat, and dismissing any diet other than theirs is not helping. It's just a different version of some of my conservative, religious family members dismissing me as immoral, or dumb for having different beliefs than them.
Words are powerful, and words hurt. As vegans, we need to lift each other up, and be strong together so we can save the animals. That is more important to me than what anyone weighs or looks like.

Why Does It Have to End????

Today is the last day of Vegan Mofo and I am so sad! I have really enjoyed participating for my first time, and I feel like I've made some new friends over the webz! Today's prompt is Fusion challange! This is probably the worst one for me, because while I am a very adventurous eater, and I love all different types of cuisine, spices,etc., I am not a fan of mixing cuisines.  I even loathe the idea of pineapple on a pizza. I will gag if I taste pineapple with marinara sauce. Way back in the dark ages when Food Network was a new thing, I used to love watching Molto Mario. When you watch him cook, it's so mesmerizing. It's like a dance, and he always gave great lessons about the regions of Italy, and why certain foods were popular in that region. He is a meaty chef, but I have seen him talk very highly of veganism, he has amazing vegan recipes, and he is actually starting to promote less meat. He is a big promoter of meatless Monday's, and I just really love him. Anyway, he shudders and cringes at the idea of fusion cuisine, and I have to say I am right there with him. So, I have no fusion cuisine to share on this last day of Mofo. I actually have no pictures because I just haven't really been hungry the last few days, so eating hasn't been a priority.
I do however have some cute kitty fusion pictures! I woke up this morning to find two of my sillies locked in the bathroom. They like to hide from each other behind the door, and sometimes the door closes all the way. I have no idea how long they were in there, but they were so happy to see me when I woke up! The other bad thing they did overnight was pull my futon base almost all the way off the frame. It now has a V shape that they can go under and have like a fort. I'm going to let them have their fort for a day.

Animals know when we are sad, or hurt, or need a hug. These little guys and gals have been giving me all the love. Chunk in particular. He has all of a sudden become a huge cuddle muffin, where he wasn't so much before. It never ceases to amaze me how kind and sweet animals are, and yet we continue to be so terrible to them. I'm not a religious person, but I have to believe there will be some kind of price to pay for all the cruelty.

Road Tripping!

Today's Mofo prompt is what would you bring on a vegan road trip? I love road trips, it's my favorite way to travel. When I moved to Seattle the first time, I moved via greyhound! Three and a half days on a bus. The few times I visited family, I also traveled via greyhound. I love making connections with people in that short time, and seeing all types of towns and cities you would normally just fly over. I've had some really interesting conversations on the greyhound! The downside is you have to eat wherever the bus stops, and sometimes you hit vegan hostile territory. I remember one trip the bus stopped at a rest stop type place with several fast food restaurants. One was a burrito/taco type place, so I though I had hit the jackpot! When I asked if the beans were vegan, the cashier looked at me and said "A what". I wish I were making this up, but I am not. I did get a vegan burrito, after about ten minutes of asking, and explaining. The end result was some beans and iceberg lettuce wrapped in a somewhat stale tasting burrito. But I was so hungry that I remember in that moment it was better than Chipotle!
It's hard to bring a lot of food on a greyhound because it can get pretty crowded in there. The next time I take a greyhound trip, I will make sure to pack small things like trail mix, nuts, crackers and hummus, just things that aren't too bulky, but will also tide you over.
This last time I moved to Seattle, I did travel by car, and for the first part of the trip I packed some tofurky and Chao cheese sandwiches. I also find that even tiny little grocery stores in tiny little towns have hummus and bread. It's a good thing that hummus has become so popular.
Also, if you have a cooler you can make burritos, and wraps which are pretty easy to eat while driving, or or being a passenger.
I can't believe tomorrow is the last day of Mofo! I feel so sad, it's been a really awesome experience, and I already can't wait for next year!
I'm hoping I will still have this laptop for tomorrow! You have to take things one day at a time in these situations.
Hopefully I will learn some more great road trip suggestions. I always can use a little help when it comes to my planning and organizational abilities!
Thanks for the kind comments on yesterday's post. One of the hardest things about feeling so low is admitting that you are down there! But it really helps when people say kind and supportive things. It means the world to me. Between the comments, and the extra love I'm getting from my fur babies, I might stay sane through all of this.

Burritos and Life.

Today's Mofo prompt is yet another choice. Tacos or burritos? People are very passionate about both tacos and burritos. I'm in the middle, as usual, I love them both! I do tend to eat burritos more often, they are kind of the perfect hand held food, and you can fit a lot of stuff in there! I feel like a burrito has a better chance of being a complete package. You can fit rice, tofu or beans, and lots of veggies. So if I had to pick one of these two things to eat, I guess I would choose a burrito!
I wish I had a picture of a gorgeous burrito that I made for dinner last night, but I didn't eat dinner! I don't want to be a Debbie Downer on the last few days of Mofo, but I am having a bit of a personal crisis. It's not Dylan, so that's a relief. I'm going through a somewhat bad breakup. I'm very scared because I haven't yet found a job, and I am super worried about life. If it were just me, I wouldn't be so worried because I've gone through a lot in my life, but it's not just me, and I have my fur family to worry about. I fear that I am going to have to live a vegan's worst nightmare and take a job at some fast food place. I have never had to work in fast food, and I sure don't want to now, but I don't know what else to do. I am very scared right now, and to be honest I haven't really been able to do much more than cry for the last couple of days. Moving back to Seattle doesn't seem like the greatest idea anymore. Don't get me wrong, I love Seattle, but it's so expensive, and I am on the low  end of the wage spectrum. The laptop I have been using is his, because my laptop had a virus, and my now ex-boyfriend made the computer unusable when he attempted to "fix" it. So I don't even know how much longer I will be able to have access to a computer since he made it clear he's coming at some point to get his "stuff" which means his laptop, since there is nothing else of his here. When this happens, I guess I can go the library and blog, but it will be weird. I'm someone who like peace and quiet when I'm writing, or reading. But I will do my best to fight through any weird social anxiety I may have. It might sound goofy, but this blog is very important to me, and I'm very proud of myself for starting it, and I love it so much. It made me realize that I really enjoy writing, and I've even taken a few free classes at the library on writing! The library near my apartment has all kinds of free classes! I know that I must love to write if I braved a classroom environment, which I am deadly afraid of. So, I guess I'm getting off track here, sorry stress and bad sleeping equal a brain fry.
I'm sorry this has been not much to do with Mofo, but as I've mentioned before, life can get in the way, and I want to be honest about my life. Plus, I don't have a whole lot of humans to talk to about how I'm feeling, so this blog is like I'm talking to a friend!
I would appreciate any good luck vibes sent my way because things are looking bleak right now. But the good news is that this relationship needed to end. No one should ever be with someone who makes them feel bad about themselves, and that's what was happening to me. We all deserve to be loved, and respected, and we all deserve to be listened to.  I once commented that it hurt my feelings that he doesn't listen or seem interested when I talk, and he told me it's because he isn't interested in what I'm talking about. He has sated that veganism does not interest him, he doesn't care about politics or world events, and he doesn't like to read! Like anything, even a magazine or newspaper!
So, I feel like this is for the best, it's just that I might lose everything I love. Anyway, I'm so sorry for this rambling, crazy blog post!
Hopefully I will be back tomorrow to finish ot the last two days of Mofo with a bang!
