I got my hot little hands on a copy of The Happy Herbivore cookbook

My local library had a copy of the Happy Herbivore cookbook and I love it. It has beautiful pictures and the recipes look amazing. I will be doing some grocery shopping tomorrow and I plan on cooking some recipes and letting everyone know how they turned out. My boyfriend is an omnivore although I dont cook meat in our house so he is mostly vegan. I have the utmost faith that a lot of these recipes will please his picky palate.
