Vegan Stuff and Cats

Here is the  pizza I made using the rest of my roasted tomato and parsley pesto. It made a really great pizza sauce! I made a quick crust with oat flour and a touch of regular gluten free flour mix, and topped it with the pesto, minced garlic, white beans, pepperoncini, parsley and Miyoko's mozz.
Yesterday I got groceries and I was able to get to Trader Joe's a little earlier in the day. It's that time of year when it's best to run any errands early in the morning before it gets too hot. Although most days it's eighty five degrees by eight A.M. so it's not always easy! My haul as usual isn't too exciting. Still in the rut. I was hoping something would jump out at me and inspire me but that didn't happen.
Potatoes,bananas,pita bread,frozen pineapple,lemons,tater tots,frozen strawberries,taco seasoning,coconut milk,plum tomatoes,romaine hearts,tofu,complete cookie,lemon

I hydrated with this while waiting for the bus. It's like a sweeter, more intense La Croix. Highly recommend!

Odds and ends I got at Natural Grocers and Smith's. I swear by Epsom salt baths. For awhile I was taking many, many Bayer back relief or Tylenol and it was really bothering my stomach so I started taking hot Epsom salt baths several times a week and it has really helped me manage my pain. If you ever have an ache or pain or just feel tight soak in Epsom salts. Much better on your stomach!
I was looking in the gardein/boca/morningstar farm section of the frozen aisle at Smith's and saw these! I have never heard of this brand, and I've never seen deli slices in the freezer section. They have turkey, ham and corned beef. They are vegan, but not gluten free. If you have a Fred Meyer or Kroger near you these might be in your freezer section too!
Afro enjoying a rare peaceful moment when she has the whole windowsill to herself.  Seconds after I took this picture her peace was shattered when Roxy jumped up. They got into some paw to paw combat and both left in a huff.

    I know you're trying to get out of retail, but I found this and thought of you. It's a locally owned pet supply store (they don't sell animals) only supplies and they support local SLC animal rescue orgs. Anyway, just thought I'd put it out there.

    1. I really love adding beans to pizza. I started with lentils and I've moved on to other beans!

  2. That soda sounds good. I’ve tried their lemon & elderflower soda; it’s pretty good and I know you like citrus :). What I really like is they’re a little sweeter than La Croix but not as sweet as regular sodas.

    1. I love the lemon and elderflower so much, that's why I had to try this flavor. I so agree, it's like if La Croix and soda ha a less sweet baby!

  3. OMG that pizza looks so delicious!!! You are definitely a pizza wizard, it looks and sounds incredible. Great looking haul and hooray for Afro getting a few seconds of peace in her life. I know how important that can be and I imagine kitties feel the same way.

  5. What a great pizza! I totally swear by that taco seasoning packet :)) and it has like a ton in it too- it makes anything taste like taco! I’ll add it to tofu scramble with some veggies and salsa and it’s a tasty meal in like ten minutes from starting to chop to eating.
    Love seeing more new vegan options! Maybe one day meatless deli slices will be the norm! :)
